    I believe it helps pull out heavy metals also! I make this every summer. I have not tried freeze drying it yet, but that's my next experiment. 💚🌿🌱🍃

    If using aged black garlic for medicinal purposes (e.g. to lower diastolic blood pressure) it's a Spanish species used in the studies. I'm trying to find out what that species is. Any help would be greatly appreciated.

    Make big batch, pop out the cloves, and put them in a bag in the freezer and pop them out as needed. Works great for me.

    How can aged garlic have more minerals than raw? What is the physics behind that? Wouldn't the mineral content be the same only more concentrated because volatile components and moisture have been removed?

      It cannot have more minerals than raw. Dehydrating the garlic and fermenting it might convert comes carbs to simple sugars, and proteins to amino acids, but it cannot create zinc out of nothing.
      If they could increase the total mineral content by dehydrating and fermenting the garlic, then I want to do the same thing with gold! LOL.

      @@Jarrodjohn2007 I think the point of black Garlic also is you can consume more increasing the health benefits rather than eating garlic raw . I can eat 6 - 8 black garlic bulbs how many raw garlic bulbs could you consume getting the same benefits, You can check that yourself that's my gold. lol enjoy!

      I have a masters in Biochemistry. Let me explain. Fermentation much like cooking breaks down chemical components into smaller molecules. These molecules can sometimes bind with eachother in different ways than they were previously. When this happens it causes different effects on the body than it originally would have. That's the simplest terms I can put it. I hope that helps.

      ​@@steveruiz5259 you shouldn't eat too much of it. It can also have negative side effects like any other medicine. 1 to 3 cloves a day is recommended for a 180 lb adult.

    This is good for the folks can’t take regular garlic . I eat elephant and black garlic. Good in veggies. Some sell black garlic powder to.

    At around 2:00 it is not a fermentation but a Maillard reaction.

      It has something called S-Allylcysteine. This allows the Allicn that's left to be more easily absorbed. It's actually better than straight Allicn.

      Eat both! also the fermentation process converts allicin into SAC which is more potent and bioavailable than allicin!
