Just a suggestion from a Minnesota boy. Whenever I get a chance to go see relatives in NYC and eat dim sum I never consume the whole thing in one bite. Sometimes also I don't use chopsticks to eat for example cha siao bo,but use my hands. Anyways thanks for experiencing China for this old second generation American! Mgoi nei!(thanks)
I think your version of the from p to b was lost in translation since he was talking about the Ming dynasty around 1300-1600 which Newman's had said. You guys are the newer gen and changed certain meanings to fit current times after the 1600's.

Pi Xi is one of the nine child of dragon, he enjoy carry mountains on his back and wondering around. In Chinese culture, when a stone stele is carved to record the great deed of a person, people often make the base stand to look like Pi Xi, as a tradition that dated back to around 2000 BCE.

YU Garden is over commercialized and no longer authentic. If you walk about one kilometer on south, there are still many narrow streets with a lot small hole on the wall eateries catering to the old Shanghainese. Those streets weren't modernized or beautified as much so you may still peek a bit of live of the past.
