Boy did we make a ripple with our last video! Hopefully this episode will clarify a few things…Katy and I have a motto - “We have no plan, and intend to stick to it”. As hard as we try sometimes to keep a schedule and to bring structure to our lives, something always upsets that rhythm. As time passes, we welcome these changes in life’s direction just as much as we have learned to understand how quickly the wind changes its direction.
We have some explaining to do, and we hope you have some answers to your questions by the end of this video. We also go to an artesian market, rent a golf cart, bake some bread, and talk about our personal healths journey with gluten, different wheats, and the delicious oh so good for you fermentation that is sourdough.

Shannon mono-sails are interesting ... though the twin screw, vintage (sail able shape) are pricey!
Temperature, pressure, time, amount of the reactive yeast to moisture...all can affect the dough. More of an art than a science 🙃
Put an unpainted tile in the stove on the bottom and it won't burn on the bottom

I'm from Buffalo and have passed through Ashtabula many times. I too was drawn in by your passage from Lake Erie across NY and down the East Coast. I'm happy you didn't move ashore like the free Rangers. I see many paralells between your two chanells with the exception of moving ashore. I'm delighted by your news to upgrade and keep cruising. I've been drawn in a similar direction and towards an Oyster 43 in Bocas del Toro.

Did Seawind have an Oak compression post or possibly an aluminum tubing post. If what’s your thought on an aluminum tubing compression post.
Did you replace the plywood subfloor and what did you use for the sole. Your wood bulkheads look great , what is it?

The bulkheads are teak veneered and are original! I like the idea of an aluminum compression post, but it would require re working of the head doorway frames. Aluminum, or stainless steel would be good. I cut the bottom 4 inches off the two oak compression posts (the cutter version had two and the ketch only one extending through the sole and sitting on the keel). I then fitted solid aluminum blocks under the posts and glassed them to the keel. This protects the wood from further wicking of water and eventual rotting.

Hey Andrew! We used a simple flour and water mixture in a clean jar. We use organic bread flour. It will start fermenting after a few days or so. You can look up a schedule of feeding the starter from there online! It's a simple process, but patience is key!

I will unsubscribe when you close your channel down, until then you are stuck with me. As to your new boat, I know next to nothing about any vessel, although I dream about being out on the deep. Your "must have/be" fits in with my dreams. "Seawind" is a big part of your channel, but you both are what makes the channel, she is just your home, travel conveyance, and source of unending maintenance endeavors. Hoping to see you doing the same level of content with your new boat. As to bringing a new one into the world, it will happen when it is supposed to, not before, May the summer be to your liking, bringing you lots of joy.
