Matty, in my eyes, this dish makes you an honorary Asian. Chinese/Taiwanese people make this almost 1:1, but with sesame paste. It’s called Dan Dan Mian. And a little kick of toasted, ground Sichuan peppercorn at the end makes it truly authentic. Fun fact, when my parents immigrated there wasn’t any tahini or sesame paste to be had, so my dad had to make do with Skippy peanut butter when I was a kid. He’s the best home cook I know.

I made these and had a huge cup of lactose free milk I made. It's more sweet than regular milk. Salty and savory washed down by sweet. Was sooooo good. A sweet ice coffee would probably be great too.
the sesame seed / chili crisp fried egg has been lighting up our life! We drizzled some hot honey over the top and have been putting them on breakfast sandwiches....its been a game changer! Thanks Matty!
