      I slip a little extra in inside the dredge as well. Every bite has got a black pepper kick

      my Uncles use to take the lid off the pepper shaker to apply. i think it was only on there to keep the fly's out.

      I usually judge by burgers unless they have this on the menu. If they call it "country" fried I dock them 10 points right there.

      Jonathon, are you from Oregon? If so have you ever eaten at Aunt Dings before they retired? I thought they had the best chicken fried steak in the area. I also judge restaurants by there CFS.

      @@dangonzalez2585 I am. Unfortunately I haven't heard of the place you mentioned. Annette's Westgate in west Salem is pretty good though. And Word Of Mouth in Salem has CFS with filet mignon.

    The use of the cast iron skillets for mixing bowl and dredging is awesome. Love cast iron.

    Don’t know why I haven’t subscribed sooner probably just thought I already was! I like your channel! You do your own thing, not over the top, or a cheap knock off of other channels. Most importantly, always some great pointers to be had!

    When i take my cubed steak up, I try to place it on it’s side against the side of the dish. I found it gets less soggy while waiting to be plated.

    Hey Matt, this video needs an update! I love this recipe and I know after 2 years of perfecting your video crafts this could be epic update on an old classic TX staple! I'm making Chicken Fried Chicken tonight with basically everything you have shown here (cream gravy, mashed taters and green beans w/bacon). This is basic Texas comfort food...beef or chicken, it's all good!!!

    Nice job !!! When you pull steak out of pan put on edge. Don't lay flat will kick up the crunch. My preference gravy on the side dip when eating. Put gravy on meat takes away from crunch factor. Looks really good!!!!

    If you use one hand for the wet dredge and one hand for the dry dredge is helps from getting the clumped up flour stuck to your hands. Recipe looks great, ganna give it a go.

    When making the gravy, use a sifter for the flour and do it gradually (don’t just dump it all in the pan with the butter). Otherwise you get flour clumps in the gravy and you taste the uncooked flour instead of having smooth and flavorful gravy

    Such an easy dish that most eateries seem to screwup generally due to the oil being not hot enough. that looked awesome, one of my favorite meals if done correctly. if not, it needs to be served with a side order of toilet paper. looks great Matt.

    I've made CFS many times but am now thinking about how delicious this would be if it was done like Korean fried chicken where it is fried once after the first dredge, taken out and then dredged and fried again for an extra crispy outside.

    Just made this tonight for me and my wife. I ordered your chicken fried breading but i used your gospel seasoning in the gravy and it was so good. i just ordered your holy cow and will try that next time. But this chicken fried steak was AMAZING. Thank you

    My kids favorite meal is double dipped chicken fried venison backstrap . I use the fry oil as basis for the gravy so not sure why you start over w butter

    In Denmark, I've had this done with Pork Belly. They call it Stegt Flæsk (pronounced Steak Flesk, or close to that). I get it each time I go out there for work.

    If I break out the dredge my lady always asks for this. Then we usually do fried chicken or tenders for dinner. I’m loving my meat church seasoning. The voodoo is off the chains!

    Forget that "butter & flour" stuff. Make the gravy with someof the frying oil and cracklins from the original frying pan. Strain the oil and dump the cooked crumbs and some of the oil back into the original pan, then use the seasoned breading flour to make the well browned roux. 2/3 milk and 1/3 water mixed and preheated in the microwave will help prevent a steam/splatter explosion when you pour it into the hot roux pan. Add salt and pepper as needed to taste. This is a gravy with some character and taste - not white paper paste.

    Found out about the Meat Church after seeing him with Malcolm Reed who I’m a fan of. Found out The Meat Church is only 20 minutes away from my house. Went to buy the flour from there and will try on Pork chops tonight and steak next time

    Add a few dashes of hot sauce, i use Tabasco, to the liquid and it adds a little something extra but doesn't make it spicy.

    Go to Harbor Freight and get one of those hooked picks you pull seals out with and it’s perfect to handle the meat. Or make one out of a wire coat hanger.

    You can imagine early settlers making this dish. They didn't have oil so the streak was fried in butter. Now, what to do with the leftover flour and butter from frying and breading? Let's add them together to make something and not let anything go to waste. Gravy was invented!
