I know this video is a year old, but I wanted to tell you that I used to use wax paper and hated how it stuck to my pans. I found freezer paper, and it is a game changer!!! Totally worth storing another box with my foils/cling wrap/parchment/etc! Wondering if you could skip blanching if you vacuum seal the flash frozen squash. The first time I froze green beans from the garden I didn't blanch... just washed, dried, snapped, flash froze, then vacuum sealed. Later I found out you should blanch them, so I added that to my steps, which doubled the prep time. We eventually ate the non-blanched green beans and no one could tell a difference, and they were at least 9 months old. I haven't blanched green beans since! Now that I have zucchini coming out my ears I think I will try some both ways so I don't spend the whole summer blanching if I don't need to. Let me know if you ever vacuum seal your frozen veggies and if its helped preserve them longer. I'm gardening in north GA and its fun to find someone gardening in a similar climate!!! New subbie 😊

Thank you so much! I will look for the freezer paper. I have found that some veggies will survive, without the blanching. Anything i can do to save some time, i will. I don't blanch my shredded squash, and it turns out fine. You can skip the blanching

Thank you for showing me how to preserve my squash. I would have chopped them up and tossed in freezer. Now I know to blanche them first. 💚

Hey, you are incredible. Thank you so much for all your videos, I am learning so much and am so excited to start preserving more of my veggies. THANK YOU! You’ve got so much work to do, but it means a lot that you take the time to record and explain it all for internet strangers so that we can grow. You’re amazing

Squashes are hard to grow sometimes because of the bug problems. I grew 30 plants to be able to get this much. I always plant a little more, incase i lose some plants. #GCF

Great idea, Sarah. And we are just starting to harvest our squash. Zucchini?
Not so lucky this year yet.
    Take care and stay safe,
    Rob

I didn't get as many zucchini this year as i usually do. I think it's too hot, or pollinators were effected by the cold earlier. I hope your zucchini starts coming in.

My wife says that she has never tried to freeze grated zucchini/squash. Thanks for sharing and have a blessed day.

I freeze it just to use in soups, or casseroles. Or grated for breads, and sauces. It's easy to use because it defrosts fast.

I love hearing about your methods we usually buy so much at the food auctions we have enough for a year

I haven't heard of a food auction that sells fresh foods. Usually it's just boxed and canned. Have you done a video on that before? i would like to see what that's like.

It's a vintage enamel ware pot. I think i got it at an estate sale. I am sure you could find one on Etsy, or Ebay. It really is useful, and worth having.
