In this case the liquid reaches its boiling point but doesn't actual start boiling. It will eventually form a large bubble and burst. It is neither your fault, nor the tutorial's. Another interpretation I have is that maybe you didn't swirl the pot enough, causing the sugar to form a slight crust at the top, trapping a large amount of vapor unerneath, which eventually exploded.

i made this(i used dark brown sugar),cored six cortland apples,poured the caramel sauce inthe apples,(apples were in a baking pan) let the sauce spill down the apples, sprinkle with nuts,bake 375 1 hour ish
Tip: The lighter the caramel is the sweeter, the darker the bitterer. So make sure before the caramel is in take it out of the stove cause it'll be still cooking!
