    Nice.=) I've been able to get a super deep crust & crispy browned fat when I do the initial reverse sear step in the air fryer. I'm sure it's due to the air circulation, so a convection oven would likely accomplish the same. I also dry brine ours at room temp for the final few hours, which intensifies the beefiness/crispy fat even further~ SO delicious!
    It's been a learning experience & a lot of fun trying out various methods/combinations for cooking our meat. We've gone through several types of cooking appliances as well; flat top grill/ air fryer grill (510 degrees- a favorite for steak), hibachi, sous vide, etc. Each of them have their place, though our trusty cast iron skillet is still the favorite. Next favorite would be the air fryer/grill combo that reaches 510 degrees~ it renders & crisps up fat like nothing else, even stopping at a med. rare/medium.
    Thanks so much for sharing your methods. We're still trying to find some grass fed & finished beef we enjoy as much, yet it's been a challenge. I think a lot has to do w/geography to be honest. What type of grass, based on terrain & location might be making quite the variance in flavor~ at least that makes sense in my mind. Do you folks have a favorite source, & is it locally raised or shipped to you? Appreciate any further info or thoughts you may have on this~ Dan & Sammy Whitson in AZ

      Thank you for the compliment and your methods. I would agree with them all. It’s fun learning and experimenting for sure. We live in NW Arkansas and are surrounded by cattle and local farms. There are over 5 butcher houses with in 15 miles of us. One doesn’t sell to the public anymore and processes wagyu for restaurants only now. Wish I could buy some of that 😋 We also have found that Aldi has grass fed and finished beef. Sam’s club only has it in ground 80/20. Kroger has very small vacuum sealed packs of special cuts but unless you get them at a discounted last day date they are expensive. Thanks again and take care.

    I'd go for a higher temp sear for less time. Gotta get them crunchy bits in there!
