15-Minute Chili Lime Grilled Shrimp

  • Craving fresh seafood? This recipe is for you. I'll show you how to make a quick marinade with a secret ingredient (hint: it's a melon!) and some hot peppers. Then the shrimp will go on the grill for a restaurant-worthy char. Ready in 15 minutes and bursting with flavor, this is the perfect summer appetizer or star of the main course! Let's get grilling.
    Easy Chili Lime Grilled Shrimp
    Servings 6 servings
    Prep time 10 minutes
    Cooking time 5 minutes
    Ingredients For the Marinade
    3-4 cups diced honeydew melon
    1 whole Serrano chili (seeds and ribs removed to make it less spicy)
    1 handful fresh cilantro
    4 green onions, bottoms trimmed
    3 limes, juiced
    1 tsp Tajin seasoning
    1/2 tsp red chili flake
    1 tbsp honey
    2 tbsp avocado oil
    Other Ingredients 2 lbs 12-16 count shrimp, peeled, deveined, skewered
    avocado oil or avocado oil spray
    Directions
    1. Preheat your grill on high. Add all of the ingredients to a blender (for the limes, just their juice - discard the limes themselves) Blend until smooth, taste and adjust salt level as desired.
    2. Brush the shrimp with the marinade and let sit for a couple minutes. When ready to grill, oil the grill grate carefully with avocado oil. If using spray, work in light bursts to prevent flares and exploding the can.
    3. Grill the shrimp on direct heat for 1-2 minutes each side until done. Brush more of the marinade on during the cooking process, and after. Serve immediately.

    Chris, you are a man after my own heart re: acidity, lime and TAJIN! i make a lime cumin garlic marinade for chicken, and also for avocado pineapple arugula salad. this looks incredible!

      Thank you! I'm the second half of another channel and instagram account called @chrislovesjulia, we primarily do home improvement and design over there, but cooking is my passion and I wanted to give it a shot on it's own channel, so we just migrated all my videos over here and have only been posting here regularly for a few weeks.     Chris - Any tips for double-skewering the shrimp? Mine don’t turn out looking quite as neat as yours. I’d imagine starting with a good quality, hefty shrimp would be key?! PS. LOVING your cooking channel. You are quite talented.

      Depends on the skewer size but for my thick, flat skewers definitely large shrimp, which don’t tend to curl quite as much.

    I'm thinking of making this tonight but what do you recommend to serve with it? I'm thinking Rice and Salad and Margaritas....

      Those are probably great! Off camera, I poured the marinade into my lemonade and it was SO good! Could make a unique margarita, probably. Though the onion was very present, so I'd recommend making some additional marinade without it haha.

      @@chris-cooks I made it last night with wild rice and salad and everyone gave it the thumbs up, and it was SO EASY. Margaritas did pair well with it. Might make myself a drink tonight with the leftover marinade just to see how that tastes! THANKS!
