What's For Dinner? - 3 Super Easy Dinners for Busy Weeknights!

I have a confession to make. The 2nd day of our Vacation Bible School, I totally failed at keeping my kids out of the drive thru. We overbooked ourselves and I had my friend Lynn take my kids through the drive thru and get them all chicken sandwiches so that they could eat. We were lucky to make it to VBS in time, but that had me deciding that the next day, I was going to plan out the final 3 days of VBS. There was no winging it any more after that day of chaos! Not to mention, we eat a lot better than the dollar menu at McDonalds. :)
The 3 simple meals you'll see in this video are:
Instant Pot Baked Potatoes (with chili & cheese): www.sidetrackedsarah.com/inst...

Instant Pot or Slow Cooker Chicken Nachos:
1 3 pound bag of frozen chicken
1 can diced tomatoes & green chilies
1-2 TBSP chili powder
1 TBSP Cumin
Cook on Manual/Pressure Cook for 20 minutes (15 if it's thawed). Quick release the pressure. Shred chicken and serve over chips with your desired toppings.
