[Ingredients] mold (17×8×6cm)
(Dough)
180g bread flour
2g salt
15g sugar
3g dry yeast
115g lukewarm water
10g salted butter
(Filling)
60g salted butter
[How to make] (Cooking time 4h)
1. Mix sugar and dry yeast with lukewarm water
2. Add 1 to the flour and mix until it comes together (1.5 min)
3. Add butter and knead until it feels uniform (2 min)
4. Leave at room temperature for 15 min
5. Punch the dough and roll it into a ball (1 min)
6. Leave at room temperature until it doubles in size (60 min)
7. Make a butter sheet
8. Wrap the butter in the dough
9. Roll out the dough to a 1:2 ratio and fold it in thirds (1st time)
10. Roll out to 1:2 ratio and fold in thirds (2nd time)
11. Refrigerate for 30 minutes
12. Roll out to 1:2 ratio and fold in thirds (3rd time)
13. Roll out to 25cm x 18cm and cut into 6 strips
14. Braid and place in a mold
15. Leave at room temperature until it fills the mold (50 min)
16. Preheat oven to 250℃
17. Brush with milk
18. Bake at 210℃ for 25-30 min.
