I just tried this with my first attempt at Lion's Mane cooking. slam dunk of flavor. This method is legit AF. I made a buttery demiglace with shallots, Worcestershire and a very small dash of wine while it was in the convection stage. Superb.
I have tried cooking lions mane before and didn’t like it. So yesterday I decided after following your channel for a while to give another shot. Picked up some lions mane and tried this recipe. OMG. I haven’t had steak in over 25 years, and these steaks looked felt and tasted just like what I remembered. Absolutely delicious, and no one is harmed. I called that win-win. Thank you for all the amazing recipes and keep them coming.
I have been a vegetarian all my life; hubby has been one for 50 years or so. When I first tried this method of preparing the Lion's Mane mushroom, I had nothing to compare it to, but hubby was super impressed with the texture and its similarity to steak. He gave it 2 thumbs up; so today I began experimenting. I did a couple of 'press & flips' with a minimum of salt only. Then took each steak and dipped it into aquafaba (replacing egg dip), and then dredged through a breadcrumb/seasoning/flaxmeal mix, and popped back into the pan. A couple more 'press and flips', then set aside and used the remaining aquafaba to loosen yummies on the bottom of the pan, reduced to very thick, and then added a nutmilk to that to a sauce thickness, and served with the steaks.Excellent entree for those special dinners-for-two! It's a good thing we have a local Lion's Mane grower...it is going on the regular home menu!
I love to hear the reasoning of why you do things in a recipe vs just saying how to do it. It really helps to understand the foods we try to prepare and what the effect could be with how we decide to prepare them
Just wanted to note your comments about how you enjoyed cooking before and wanted to continue enjoying the entire process after going vegan is a great answer for folks who question why vegans/WFPB/vegetarian people like to use veg, shrooms, tofu etc to make items they call "steaks" or "Cutlets" etc. Along with cooking and eating enjoyment, it also completes our traditional looking meals on our plates visually - a main dish with accompanying sides. Anything to make it easier for people to make the move to an animal free/vegan/wfpb lifestyle. I don't know if I explained that well but I wanted to toss it out there.

Thank you for the great video! I'm getting ready to prepare the Lion's Mane I just harvested. I was in the backyard vacuuming off the coils of the AC condenser of all things and spied a bright white "flower" from over the fence in the woods. Fantastic recipe and step-by-step walk-through. The result far exceeded my expectations. Lions mane has amazingly meat-like color and texture while having a mild flavor NOT reminiscent of earthier flavors cremini or portobello. This recipe came out visually stunning and incredibly juicy.

Hmm I'm going to raise some lions mane for fun and grill it. But the two best dishes I've ever ate in my life were slow roasted prime rib and polynesian pit bbq. I've tried lots of food from tofu, pig blood in the philippines, salted fish, almond milk, and fake bacon. I just haven't found nothing in the vegan world that has made me want to abandon meat taste wise. I raise my own beef in a large pasture. I think it's bad to raise animals in tight spaces and for them to have a bad life sure, but I've not been able to abandon eating meat especially when I raise my own beef and chickens etc. Now if vegan meals actually were say the best meal i've ever had I'd probably consider going that way. It's like I was raised on raw milk as a kid and now I still drink milk from the store, but it's subpar. It's lower quality being pasturized and not fresh, but the government and all claims to know best. My taste buds however still has me liking raw milk when I get the chance to get some.

What a great looking "steak!!" I understand the lion's mane is pretty versatile, doing a good impersonation of crab/lobster as well. Thanks for sharing this one with us. Mouthwatering!!
The lion's mane really is a fantastic mushroom. It tastes delicious, has so many health benefits. Almost to good to be true, but it is. Currently I am trying to initiate some lion's mane mushroom spawn to grow some at home, because due to them loosing a lot of weight due to water being evaporated it can be pretty expensive if you wanna feed a full family.
I'm following along and it's actually really fun. I'm not much of a cook but I wanted to see how to eat these for the health benefits- but mushrooms open up a whole new world to me!

I asked the young lady how much a box was and she started showing me how much made a 1/4 of a pound. I remined her I asked about the box. She apologized saying most folks buy 1/4 or 1/2 a pound. I like just enough spice to warm the palate slightly, thus amplifying the flavors, but when cooking for others I make a sauce without heat, then split that into another dispenser *with* heat for those who like it. This allows people to determine the amount of heat for themselves. I have one grandchild who can't handle heat no one else can even detect!
Respect the technique! Love the texture of lions mane! Bring the heat, Sir! Burgers, thin-sliced fillets. Sauced or undressed! Bedded on rice with veg of preference; or plated all by itself! This is a winner!
Couple of years further, but I'm curious if you've ever considered vacuuming them with some serious umami and salt for a couple of days in the fridge and then pan searing
it's nice that humans have developed to enjoy the act of demonstration and dialogue regardless of the topic. that in and of itself is entertaining, I love lion's mane, I'm tempted to try this.
This gave me an idea. I could make "pork" chops German style, the way my Dad used to make. As someone else suggested, it involves breading and frying and served with apple sauce. I'm going to give it a try. We have Asian markets here that carry all sorts of mushrooms I'm sure I can find them there.
where do you draw the line of cruelty? i love fungi but also meat, however more lives are lost in the consumption of fungi. is it not cruel to eat the fruit of an intelligent organism that spans kilometers underground and can feel every incision? it's a pointless thing to suggest, killing for food is not cruel it is baseline reality. killing for sport, is cruel.
Question and a special request. Can I bulk cook these mushroom steaks and freeze them? Plus I would love to see a cast-iron care video since you are the master. I have cast-iron but I'm unsure if I've seasoned them correctly and unsure how to properly clean them. Would love your take on the matter. Thanks for all you do and I've tried several of your recipes and all have been delicious.

Love tasty, flavorful food 😋 The lions manes look great. Loved all the tips you shared. I could use some mushroom education ... seeing the different ones, hearing about textures and traits so that I can choose with more awareness as to how they would "act" in the recipe. I doubt it. Lion's mane is really strictly protected in the UK for conservation purposes. I'm assuming Smithy must have a special licence to be able to legally sell them
Made these last night and they were delicious! I purchased the Lion's Mane at the Petaluma Farmer's Market. My husband thought it was Ahi tuna at first. I will definitely be repeating. They gave such a meaty, earthy, rich flavor, just like a steak. Thank you!
Great advice - subscribed. Tried this with shichimi togarashi, cayenne pepper, rosemary and salt n pepper seasoning. Ate two lion’s mane steaks with a mixed salad. Very tasty, but the mushrooms shrunk radically. Got to start next time with much bigger ones.

Great tip!
Looks great!👌🏼
Respect the technique! Love the texture of lions mane! Bring the heat, Sir! Burgers, thin-sliced fillets. Sauced or undressed! Bedded on rice with veg of preference; or plated all by itself! This is a winner!
Fantastic!
I make your garlic gravy with the wine all the time and if I were to get hold of those mushrooms I would make this as well. Thank you for this recipe.
Yo!!!!! I am LATE TO THE PARTY!!!! This DISH LOOKS AMAZING!!!!!
Love spicy food, but not every day. Great recipe! Mushrooms are amazing 🤤🤤🤤❤
Couple of years further, but I'm curious if you've ever considered vacuuming them with some serious umami and salt for a couple of days in the fridge and then pan searing
I tried it... approved!
gamechaning technique - the second pan works really well on oysters, too.🤤🤝
Just ordered a couple of lions mane mushrooms from my local farmers market, can't wait to get them and make this.
I followed the cooking directions except only added spice mix once to each side. AMAZING
Spice it up truly enjoy!
I love everything about this video and also your cutting board!
Glad you like it!
it's nice that humans have developed to enjoy the act of demonstration and dialogue regardless of the topic. that in and of itself is entertaining, I love lion's mane, I'm tempted to try this.
Are you not a human?
This gave me an idea. I could make "pork" chops German style, the way my Dad used to make. As someone else suggested, it involves breading and frying and served with apple sauce. I'm going to give it a try. We have Asian markets here that carry all sorts of mushrooms I'm sure I can find them there.
Thanks for watching. We'll be doing a long form of this soon. ua-cam.com/users/shorts6ynx1gyNDJo?feature=share
Yum we love growing lion's mane!
👆👆link up with him 👆👆
He's a verified mycologist, he got some quality stuffs
Love spicy, but truly, just love [cruelty-free[ food!
where do you draw the line of cruelty? i love fungi but also meat, however more lives are lost in the consumption of fungi. is it not cruel to eat the fruit of an intelligent organism that spans kilometers underground and can feel every incision? it's a pointless thing to suggest, killing for food is not cruel it is baseline reality. killing for sport, is cruel.
Spicy food all the way Derek! ❤
Thanks, Derek!!☺
Mushrooms are so incredibly versatile. I don't understand people who don't like them.
Thanks for watching
Making this tonight! I am fortunate to live within 25 miles of the Lodge Cast Iron manufacturing facility in southern Tennessee, and I have quite a collection from their outlet. Looking forward to pulling a couple of skillets out of the pantry to cook up these shrooms.
Please put me in the camp of "not so much spice, please". Love your book and your videos.... thank you!
GREAT JOB!!!!!
This was awesome, ive never been sure what to do with lions mane. Turned out delicious thank you!
Ma man! Amazing recipe! Looks absolutely delicious! I cannot find lions mane locally, so I bought a producer's kit and I will try your recipe! Cheers from Brazil!
Awesome! Looking forward to hearing about your results
So easy to make. Absolutely delicious. Addicted to your recipes. Where do I buy these spices? I couldn't see them on Amazon. PS: Spicy foods not for me, bad reaction.
Im a new fan and that made me salivate! Thank you!
Thx, I am amazed as well at it's taste, definitely a new go- to
Just made this for the first time… I’m doing a detox and veggie during this time. I was missing meat so I tried this for a substitute. Holy smokes, so good!!!
This recipe looks amazing, but what I really need is a tutorial on that cook trick you do with the kitchen tongs. Cooler than a pancake flip!
Looks good🌱
Awesome!!
I am going to make this today since I’ll be visiting the farmers market . This recipe looks absolutely amazing . Just subscribed ! Yummm thank you !
Love tasty, flavorful food 😋 The lions manes look great. Loved all the tips you shared. I could use some mushroom education ... seeing the different ones, hearing about textures and traits so that I can choose with more awareness as to how they would "act" in the recipe. We didn't grow up in an area where we had access to any mushrooms except for canned 😅🤣😂 so cleaning and storage tips would be great too. Thanks for sharing this. Much appreciation and best wishes to you and your team!
ua-cam.com/video/wnCCdpt8y6w/v-deo.html ..... came across this a few weeks ago and found it very interesting and helpful!
@@emilydillon4321 thanks so much for taking time to share the resource that helped you! I will check it out.
I came across your little brats at a sprouts grocery in Denver, Colorado. Well done guys, those were amazing with a little kraut and cornbread
Just made these last night and I had a considerable amount of water come out. Damn near submerged half of the mushrooms. Would you recommend pouring off the water if it's this excessive? Thank you. They were amazingly Delicious btw and super tender in certain parts.
Looks very interesting
Thanks for sharing
Amazing!
Thank you! Cheers!
This with your roasted vegetables, mashed potatoes, and say a chickpea cookie with vegan ice cream would be amazing!
When you cook for Paul Stamets invite me too!! We can have a great mushroom meal, listen to some Grateful Dead, and enjoy each other’s company!! 🌺🍄❤️🦋🥰
Dang! This really looks incredible.
I love spicy food and also cater to kids so I learned balance.
Also the cooking experience is apart of the fun. This recipe looks simple and this is a favorite in my kitchen. I’ll try this today.
Wowzers! Definitely gonna give this one a go, extra spicy!
A Couple of people in the produce section of Whole Foods told me about lions mane mushroom today. I’m excited to try it.😊
LOVE spicy food...can't wait to try this steak!
Love it ....can't wait to try it.
Thank you
Hope you enjoy
Does this mean Tescos will start stocking these? They’ve been great with their range of mushrooms, although I’ve noticed they haven’t had cluster mushrooms for a while. The king oyster mushrooms have been amazing!
I doubt it. Lion's mane is really strictly protected in the UK for conservation purposes. I'm assuming Smithy must have a special licence to be able to legally sell them
@@Fidgottio that's only for wild foraged, you can grow them commercially. I just harvested some off of a fruiting block I bought
I tried it. Amazing!
Awesome! Thanks for letting us know.
I've been watching your Lion's Mane videos (among others) for a while now and I finally picked some up at the Mushroom Hub store here in Detroit. I used this method to prepare it and it was unbelievable! The owner is a great guy and anyone in the Detroit area should check out his store!
wow, eye opener, amazing, I neeeed to try this
Please do!
I’ve cooked LMM stoppe top in a skillet, it turned out delicious. The oven technician is a must try. I can’t wait to taste what a world of difference it will make. Thank you!
