There are many aspects of the "Eternal Champion", embodied by author Michael Moorcock's titular characters. I highly suggest reading the Elric of Melniboné series, which heavily inspired GRRM, and see this video isn't far off the mark. I came to the same conclusion years ago. And, while "everyone" might not be Azor Ahai, he is embodied by several characters, both POV & otherwise.

I've always believed that multiple people would be Azor Ahai for one single reason: the Last Hero had a dozen companions. I'm 100% convinced that there will be 13 characters that will fit the Azor Ahai prophecy, but I don't know which ones yet.

The prophecy is pretty clear "Born amidst salt and smoke, beneath a bleeding star." After Jon Snow is justly executed by his fair minded sworn brothers his body will be deposited in the ice cell to prevent him from rising as a wight. In addition to Jon Snow the body of Ser Patrick of Kings Mountain will be deposited on top of him. Ser Patrick has just be merced by Wun Wun the Giant, his arm was ripped off and blood was flying everywhere and got on everything. Melisandre will trick Selyse into burning Shireen on the promise that she will wield some magic to save Stannis and then after Shireen is burned Melisandre will betray Selyse and use her Kings blood juice to revive Jon, who she now knows is Azor Ahai. The Prince who was promised will be reborn amidst salted beed and smoked ham under the blood stained star on Ser Patricks Surcoat. GRRM specifically tried to trick us by claiming that the Ser Patrick vs Wun-Wun is an allegory to his home town NY Giants beating the Dallas Cowboys (who's logo is a star, just like Ser Patrick), but it's actually a sneaky way to fulfil the prophecy in the ice cells.
Azor Abai is heavily influenced by "The Eternal Champion". If you haven't read any Elric of Melniboné books then I would highly suggest doing so because I came to the same conclusion as your theory by reading one of the series that heavily inspired GRRM (Elric of Melniboné)

The Eternal Champion is a character which exists through many different timelines of Elric's author's work and each aspect of the Eternal Champion is embodied by one of his titular characters. I've read just about all of the Elric books and they are my favorite, & I'm an absolutely huge fan of ASoIaF so I can appreciate the many references scattered throughout.
I agree generally that name changes in chapter titles signals change of identity - but its also just a stylistic choice reflecting nothing about the character sometimes - eg Asha has a title called 'The Kings Prize' and 'The Wayward bride' but her identity isn't deeply changed or affected by these labels at all.
Very true, I think the most generic one is Areo's Captain of the Guards, it's literally just his job description. I think they matter most when it's changing the name of a character that usually just has their name there, like Theon, Arya and Sansa

Another reason for Areo, Aeron and Arys not having their names on their chapters is to avoid confusion between the three names.
