It's nice to see Jean-Georges again and in another series that I like to watch. His Mise En Place video was the first Mise En Place I watch and it was truly mesmerizing to watch. The way Nyesha interacts and learn from these Chefs is really fun to watch. Looking forward to seeing more of this series

I’m from Cuba, and grew up in Miami, I’ve been grilling swordfish my whole life. You guys have blown up my brain. This is the best idea I’ve ever seen for swordfish.

I love how humble dishes such as a Milanese are given and treated with such respect, while at the same time highlighting how each component lends itself to complement the dish.
Chef Nyesha has enough charisma to make any video amazing. Add in Noah and Jean-Georges and it would have taken a concerted effort to make this video anything other than a delight. This was great!

Brown buttered infused with herbs mixed with reduced white wine, capers, and a fermented jalapeno, orange peel salsa. I know that sauce taste out of this world 🔥
That looks really nice! One thing though: "milanese" obviously does not "translate to" elephant ear. It just means "from Milan". Elephant ear is sort of a nickname for the dish. Italians in chat may confirm.
I loved everything about this episode, great host and interviewer. Also, I hate to sound like "that guy" but as an Italian I'm compelled to make a correction to the translation of "Milanese", because the executive chef said it means "elephant ear" and when I heard that I just burst out laughing lmao. "Milanese" means "from Milan" and it's actually an adjective, the full name of the dish is "cotoletta alla milanese" which basically means "cutlet Milan style". He was right on the shape tho, it does kinda need to look like an elephant ear. Looking forward to the next episode!

So when making the fermented peppers and oranges, do you ferment it at room temp by just leaving it out? Or ferment in the fridge for 24 hours? Also, where did that go in the final plating - into the butter after the herbs?
