i couldnt find a written recipe so i gave the video a second watch. im sorry if any of these are wrong!
1 cup cold, chopped salted butter
1 cup dark brown sugar
3/4 cup granulated sugar
2 eggs
2 cups 3 tsbp all purpose flour
3/4 cup cake flour
1 1/4 tsp baking soda
1 tsp salt
"a lot" of vanilla
1 tsp cinnamon (optional)
8 oz bittersweet chocolate
2 cups unchopped walnuts

For those wanting to make these cookies in 30 mins - DON’T. You can’t skip the chilling step. Chilling for two hours prior to baking helps the cookie stay round, instead of spreading in the oven, and keeps the cookie interior under-baked :)

ITS THE CORNSTARCH!! I make my levain-type cookies with cornstarch and it makes all the difference. No chill time. Best cookie ever.

1 cup cold butter cut into small cubes
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 t vanilla
1 1/2 cup all-purpose flour
1 1/2 cup cake flour (**I always just use 3 cups total of regular flour)
1 t cornstarch
3/4 t baking soda
3/4 t salt
1 1/2 cups chocolate chips (I like mini the best)
1 1/2 cups chopped walnuts (optional)
Preheat oven to 410F
Cream together cold cubed butter, brown sugar, and sugar until creamy (~2 min).
Add eggs, one at a time, and vanilla.
Stir in flour, cornstarch, baking soda, and salt until just combined.
Stir in chocolate chips and walnuts.
You can make huge, Levain-size cookies OR you can make smaller, regular cookies.
Bake for 9-12 minutes or until golden brown (baking time will vary depending on size you choose...regular size cookies bake for 10 minutes in my oven).
I often will half the recipe to get 8-9 regular sized cookies. :)

@@MZ-jf2kw Correct, I never have cake flour on hand, so I just sub in plain flour, which the original recipe says is fine to do. :)
My favorite way to get quick homemade cookies is to make a batch of cookie dough and form two logs with it. Wrap it in saran wrap and toss it in the freezer. Whenever you want cookies, slice 3/4" discs off of the log, toss in oven at 425 for 12 minutes or so. Take em out, let em cool for 2-3 minutes and enjoy them with a bowl of ice cream. Couldn't be easier!

cookie flour means less protein %, yes. But means also it doesn't manage to absorb much fluid. For example, for bread and pizza, you want strong flour (more proteins) in order to absorb more.
On the contrary, wholemeal flour has a lot of proteins and can absorb a lot of water but doesn't develop gluten, so its dough it's not so extensible.

2(?) large eggs
2 cups & 3 tbsp flour
3/4 cup cake flour
1 1/4 tsps baking soda
1 tsps salt
1 glug! vanilla extract
2(?) tsps cinnamon
8 oz bar chocolate
2 cups whole walnuts
Makes 10 cookies, bake 400 degrees Fahrenheit 12-15ish minutes.

If you want them to hold their shape, don’t over mix the batter, and add the moisture (egg) at the end.
The cookies will definitely not spread then, once they’re chilled
i haven't seen this but how can you make cookies in about 30 minutes? the dough thing needs to rest for 3 days
