I did a little experiment with myself: my thyroid specialist suggested I follow Dr. Gundry’s plan to help cure my Hashimoto’s thyroiditis. So, I went and stopped most lectins for three months and took a blood test. (Note that I am a whole food vegan). My antibodies did not go down at all. However, I started working on my gut Microbiome and re-introduced all the lectins and voilà! my antibodies went down considerably.
I have Hashimoto’s so this is good info, I’m also vegan (6/7 years but Hashimoto’s for 23 years). I’ve thought about cutting out wheat flour/berry out since I’ve read it mimics the thyroid at a cellular level, causing a larger autoimmune reaction. Idk though. Not cutting grains (corn, oats, etc), just wheat flour I should try it and get labs done afterward on my thyroid just to see if there’s a change. My levels have been stable for many years so far

Personally, I’ve found a great deal of Dr. Gundry’s podcasts and teachings are excellent and informative - whilst myself ignoring the lectins & his supplements adds (not many of these to be honest and other options are often given). He’s a heavily plant based educator and covers varied topics in way that I find useful. It doesn’t mean I agree with him all the time as I certainly don’t - just like any other channel. :)

Animal products if cut completely will reduce total cholesterol from first day . Did personal experience as a medical doctor on myself reduced my total cholesterol from 7.4 to 4.8 in 2 weeks but my liver enzymes raised a little bit in these 2 weeks because no oil at all even plant oil.
Legumes and nuts have been a stable food for Greeks especially Cypriot Geeeks for 100s if not thousand of years ...I grew up like millions of Greeks having at least 3 times a week a legume main meal. The Mediterranean diet is based on legumes as these foods form the most frequent consume food as a main meal , at least 3 times a week as I mentioned above. The people consuming legumes as their basis of their diet are the longest living and most healthy in the world. The whole argument about lectins is false if you follow the Mediterranean way of cooking and eating legumes which one of the most nutritious food on the planet. It is easy and fast and has the additional benefit that dried beans can easily be stored in relatively large quantities because they take less space than canned beans. I also **think** that they are tastier, possibly because I cook them without salt.
If you touched on sprouting beans I missed it. It is my understanding that sprouting beans reduces lectins. Do you know what percentage of the lectins are removed by sprouting? Since Dr. B recommends sprouting lentil I'm assuming they are safe and healthy.
Budget conscious are soaking and cooking dried legumes to save $$$ Those who want to avoid "gas" do a 3 day soak changing water each day. No gas left. Nice cooked beans

I think the issue is the sensationalized titles and text that are meant to sell supplements and books and confuse people: "The Plant Paradox: The Hidden Dangers in Healthy Foods That Cause Disease and Weight Gain. The Plant Paradox is a revolutionary look at the hidden compounds in "healthy" foods like fruit, vegetables, and whole grains that are causing us to gain weight and develop chronic disease." If he came out and said hey guys, I eat beans twice a week but don't eat raw, hard beans, it wouldn't sell many books because that's what people are already doing (if they actually eat beans).

Real great conversation, both for debunking gundry and secondly exposing how people can be manipulated into the quackery market. About 30 years ago I was hooked on the Barry Sears ZONE diet. He claimed all nutritional science, and medicine was mostly wrong, and HE knew the path to cardiovascular health, if you followed his system! Fortunately his dietary principles were pretty good, but after following his diet and buying his expensive books, I came to realize that he simply copied the conventional science, of which he criticized. Now that I can admit being hooked by quackery, let all beware that their own nutritional guru might market snake oil. Analyze nutrition as science, not a religion with a Messiah.
It's so frustrating that a book can be written about anything by anyone with some form of credential, but no actual knowledge or backing of valid scientific studies, and we have to spend so much time refuting their claims. This feels like the Atkins era. The number of times I've been asked about lectins is about as many times as where I get my protein.

Oxalates???? I was a vegetarian for over 25 years. And the oxalates were destroying my kidneys! With kidney stones.then kidney cancer. I had to make big changes in my diet. so i been eating meat alot and fasting. I feel incredibly fit now at 58 no more kidneys Stones, stomach issues.
I am sorry about your kidney stones and kidney cancer, but being vegan or vegetarian does not inherently increase your risk of kidney stones. Excessive intake of oxalate rich foods like spinach does, but that has nothing to do with you being vegetarian. Other risk factors of kidney stones are low calcium intake, high animal protein intake, and low fruit and vegetable intake which your current diet seems to have.
This is a wonderful health talk. Gundry is a quack. If you listen to Gundry you’ll be sick. Thank you for logic. Simon Hill always has knowledge filled discussions.

Ancient Ayurveda (the legit Ayurveda, not the woo version it’s become) actually advises against pressure cooking food. They knew that lectins were healthy for you, and that pressure cooking destroyed all of them vs regular cooking keeps some intact for you to benefit from
Gundry said Eden brand canned beens are okay because they are pressure cooked, and pressure cooking destroys lectins. The generic canned beans I buy, which cost way less than Eden, are also pressure cooked.
@gabymalembe Eden cans have been BPA free for many years,before anyone was concerned about it. A bit more expensive but they're a great company that I don't mind supporting.

Gundry said Eden brand canned beens are okay because they are pressure cooked, and pressure cooking destroys lectins. The generic canned beans I buy, which cost way less than Eden, are also pressure cooked.
@gabymalembe Eden cans have been BPA free for many years,before anyone was concerned about it. A bit more expensive but they're a great company that I don't mind supporting.

Pressure cooking without soaking also destroys lectins faster than the time it takes for beans to become edible.
"Pressure cooking without presoaking the beans decreased the lectin concentration to below detectable levels in 45 min. However, 60 min pressure cooking was required to soften the beans sufficiently to be edible. Commercially canned red kidney beans frequently eaten without further heating varied in lectin content but the levels were close to those of beans pressure cooked for about 30 min."
