  • Korean mushroom soup (Beoseot-deulkkae-tang: 버섯들깨탕) is a delicious, nutritious, savory soup made with mushrooms and perilla seeds powder. The perilla seeds powder makes the broth soft and nutty, and the beef brisket and the mushrooms are chewy, soft, and crispy, giving this soup a very unique taste and texture.

    Very difficult to found perilla powder so I will just put coconut powder or creamer for cooking 😂

      Use sesame seeds powder then. It will turn out very nutty and flavorful.

    This delicious soup is going to be my dinner tonight! I went out in the forest nearby today and found five kinds of edible mushrooms (Sheep Polypore, Hedgehog Mushroom, Yellow Foot, Funnel Chantarelle and Golden Chanterelle). Together it all made more than one pound. We have amazing forests here in Sweden and we do love our mushrooms. Swedish autumns are always synonymous with mushrooms. I can't thank you enough for your beautiful recipe! ❤

    Maangchi never wastes food and ingredients, also she cleans the utensils and chopping board every time. This hygiene tells us about the goodness of Korean cuisine and culture. Really appreciate her cooking style.

      Really, you should only taste when spices are a big part of the dish. Too salty and some people won't eat it. Too spicy and the same thing.
      I usually use a bamboo skewer for tasting things.

    I’m vegetarian, and still find it so easy to swap out ingredients in your delicious recipes. Tonight, My husband ordered takeout. I declined so I could make this dish. My 11 year old son ordered chicken tenders and fries. When we sat down to eat, he saw my food and said, “I’d eat that.” He doesn’t even like mushrooms, but he picked MY dish over his favorite takeout! He enjoyed it so much. I’m on cloud 9!!!! Thank you soooo much!!!! I used shitake, wood ear, king trumpet, oyster, and shimeji mushroom! Amazing!!!

    I live alone and don't cook much anymore, mostly out of bad habit. Then I saw your recipes on UA-cam. :D I had to try this soup. I couldn't find Toasted Sesamee powder or Perilla powder near me, and out of desperation I used Almond Powder (I have ordered Perilla Seed powder online for my next batch). The soup was exactly like you said. Tasty, easy to make, and my doctor wants me to change what I'm eating. He said I had to stop eating anything with fats, and "if it tastes good, don't eat it". Well, the soup tastes fantastic, and it's ok for me to eat! I will try it with chicken next time maybe. I like your recipes a lot, and will start trying more, and start cooking for myself more. Thank you.

      pls take care of your health! dont take up bad habits like that, its easy to do it when you live alone. There are many good cooking channels on youtube and you can try them out. Cooking not only gives you food, it gives you pleasure as well

      PIRELLA SEED POWDER is not sesame seed powder....please do not confuse it with that, I have this and its actually derived from a plant called "Beefsteak". Its gives your soup a milky texture and a slightly earthy and nutty flavour. Use of an earthware pot is recommended.
      If anything the plant is similar to mint.
      Dont compare it to Sesameseed please you will ruin your receipe.

    My mom makes a very similar mushroom soup, but instead of perilla seed powder she actually grinds up rice in water to make it pasty and it gives such a wonderful thick texture to the soup 😍😍😍

    i love Maangchi, she's always so cheerful and jolly and her recipes are so easy to follow (not to mention fun) i absolutely love this channel, i made her horseradish and beef soup last weekend and ive had it the whole week (although we don't get horseradish where i come from so i did it with bok choy instead and just added 6 teaspoons of hot english mustard) and it came out amazing👌

    Hello today I did the mushroom soup it came out really good but I live in a small City they didn't have sesame seed flour or perilla flour so I had to buy sesame seeds and start grinding them until it became the flour but it still came out good thank you for more good recipes love your channel maangchi

    I travel about two hours to the Korean Grocers. I live in New Mexico. So I travel from Gallup to Albuquerque to get my ingredients.

      Taqwa Oleksandr Is it saltly enough? I'm vietnamese and we add alot of fish sauce to everything. Im just wondering if itll need some adjustments. Did you try it with the sesame seed powder instead?

      I do it with sesame seeds that we toast and then grind to make a powder. I prefer to use fish sauce and soy sauce to make it salty (to taste) instead of using normal salt. Also, I use fresh ground pepper at the start when browning the meat (sometimes I use chicken instead of beef) with the sesame oil and garlic.

    For vegan : just skip beef, fish souce/ add tofu(I prefer smashed), veggie broth. Perilla seeds are high in omega3 like flax seeds, so healthy!! This is one of my go to meal as a vegan.!! 망치님 너무 고마워요 ~ 레시피 보면서 많이 응용하고 있어요 !!

    Maangchi, I´ve been following your videos and recipes for 10 years now ever since I was in university. I decided to comment today to let you know that I've followed most of your recipes except ones that required perilla seed powder because I could not find it where I live. BUT! recently I've managed to find a bag of it so I tried with this mushroom soup recipe, and oh my... it really does make a difference! the nuttiness is to die for.

    Thanks Maangchi i now learned that dried shitake mushroom takes 4 hrs to soak no wonder every time i cook am having indigestion.

      Yeah, I found some dried shiitake mushrooms take 12 hours to soften.

      turn the AC up in full blast and soup away. I love soup, no matter how hot or cold it is. it's a great way to lose weight also.

      Texas heat is horrible too. we don't even have a "fall" season, just summer for 9 months and winter for 3. gonna make all her soups during those 3 months though!

      omg yes. last year Christmas was so hot too!!!! I live in a Houston and it was like 75+ degrees outside. all our holidays were so hot 😣

    Did this with no beef, I used the soaking water from the dried mushrooms, a cube of vegetable stock and 4 scallops instead. I like salt so I added one extra tbsp of fish sauce. Super yummy and delicious !

    I didn’t have any perilla powder to put in the soup but used tahini paste instead (which is just ground sesame seeds anyway) and it’s a great alternative!

    I've made this soup many times.But I skip the perilla powder because i can not find it in here.I Also add white crap mushroom.And the taste just amazing.All of my family including my mother in law loves it.Onw of the dishes she never refused it.Thank you Maangchi😁

    Made this soup without the meat. I substituted it with beef flavored vegan bouillon and added more mushrooms and carrots plus sesame paste to the perilla seeds. Turned out great too. Thank you!

    i just tried to cook the soup last night :) and my husband said that was wonderful! best soup ever cooked. I have replaced the sesame powder with soy milk, but the soup was not that smooth. I better use the nutty powder next time :) thank you so much for your videos :))

    I didnt have glutinous rice flour so i used potato scratch for thickness instead.
    i didnt have Buchu so i used cilantro instead
    (It was what i had in my fridge )
    And my husband is vegetarian so i had to use
    Plant- based ground meat
    Mangchi ~~~~~
    My husband and i looooooooved it so much
    We usually enjoy salty and extremely spicy
    Foods but this mushroom soup changed us !

    Going to make this this weekend, it rainy in Seattle and perfect soup weather! Tip: when you’re looking for a variety of mushrooms it really pays to go to a Korean or Asian grocery store, they already have a variety of great produce and much more reasonable prices ❤️

    Makes me hungry. I love Korean dishes taste lovely and majority are healthy especially your noodle soup. I'm getting obsess with your kimchi so good in any meal. I'm gonna get plenty of that in our mall called S.M

    I am so Glad to see that you washed all the mushrooms before you cooked. I have seen many cooks or chef do not wash mushrooms, just use as is. Maangchi, is it true that if we washed the mushrooms, we are making the mushrooms no more flavorful?
