I have a jar of chow chow from summer of 1995. It is the last thing I canned with my momma. I lost her on Christmas Day that same year. It still is the same color and looks beautiful. Of course I won’t open it. It just holds a special place on my pantry shelf. It has moved with me four times. I did open a jar back in 2018 and it was still good.
We ate some frozen super chili peppers from 2013 the other day.... I'm still here and going strong! I love that you guys share your life! It puts me in a happy place!
My husband found a quart jar of chicken I canned for supper. He turned it into soup. It was so delicious. I had canned it 1-12. We're still here. The lid popped. Everything looked and smelled yummy.
In 1977 my husband and I moved into his grandfather's house after he entered a nursing home. In the huge chest freezer we found frozen clams dated from the early 1950's. Yikes! We chose not to eat them but another relative did and lived to tell the tale. They claimed the clams were perfectly fine in chowder. :)
We've found A LOT of older canned veggies. The oldest is from 2012. They tasted and looked fine AND we are still alive months later to tell the tale. We are still going thru the jars. We will not let this happen again.
Everything looked delicious. I was going through my canning and found some plum jelly that was 2009. Was going to just toss it but decided to open it, it was fine and tasted delicious. Had two jelly jars, now using the second one.😊 And still here.😁

Y'all have inspired me to start my own seeds, which I don't have room to plant outside, so I'll give my mom what she wants and sell or give away what is left. I also planted 6 blueberry plants in containers and just planted 2 cherry trees yesterday.
As Todd was cooking the pasta meal, I kept thinking what an amazing cook he is, esp Italian. Then chuckled when you shared about the troubles you had. Happens to me all the time. I swear I can’t focus on several things cooking at one time anymore. Making a big breakfast has me about a wreck these days😂trying not to burn pancakes while cooking eggs.
Favorite way to prepare salmon? My mom just gave me a huge half of a salmon from her freezer and I’m not sure how to fix it. I’m very grateful for her gift and we love salmon, just looking for a creative way to use it!

We just finished the last of some very over processed sweet pickle quarts I canned in 2016 at the beginning of this year. Still good! Probably the oldest thing in my canned pantry until then.
Last year we had a Fabulous tomato harvest and thanks to your helpful information I was able to freeze over 100lbs of tomatoes and canned up a whole lot of tomato sauce and Spaghetti sauce, I just used the last of my spaghetti sauce. Looking forward to watching more of your canning videos.

The theory is the newer stuff still should be good. IF you bar coded everything, at least you would know what you have to get to because of it's age. Just looking for a general rule like 3 years on pickle slices, 4 years max on beets, carrots, 4 years, etc. - Just to learn. Even with the freeze dried stuff, do you get mold or mildew without preservatives? What went bad with the flour? Too much moisture maybe? just looking to learn. Never criticize. Spill. What things do you get longefitvy on?
Question: how do you meal plan and food/ supply shop while working full time? I do have some canning I do but that’s a struggle to get completed as well. In my 50’s I don’t move as quick as I used to and am so incredibly tired when I get home from work. Hubby and I struggle every night with meal time. Tips?
We always enjoy watching yawl cook. There are some nights Rochelle and I are so tired our go to is lemon garlic pasta. I have 2017 shredded zucchini in my freezer. It’s not freezer burned so I’m mixing it in my steel cut oats and having what I call zucchini bread oatmeal. It’s good.
First I would like to say that I have learned so much from your video. You are so inspiring to me and got me into canning. I am trying to spend less time watching youtube and more time doing things, but you are 1 of a few videos that I make sure that I watch your videos every week. I am interested in knowing why you have not tried to make cheese. Cream cheese and Mozzarella is sad to be easy. I hear that making sour cream is very doable also. I made homemade yogurt, and it is amazing will always do it in the future.
I haven't seen a round steak (yes that is the proper name for it) in years we never get them here anymore we use to get them all the time. . I have a 2014 jar of relish my mom made, she's passed now I keep thinking about opening it and giving it a try

I canned some spaghetti sauce and tomato soup last Fall and I haven't used it because I wasn't sure if I should. It's good to see how you use your preserved food. A question for next week, after your year resting the garden do you plan to go down the no dig route, or are you going to dig the beds when it's time to replant them? This will be my first year gardening on a larger scale and I'm going to try new dig on both new and previously dug beds.
My question is about dairy-free recipes. Do you have a favourite one? Also do you have a favourite vegetable stir-fry recipe? I know you can't grow ginger where you are but garlic, lemon grass and chillies grow well,... and basil

Before I crack open a jar of the new canned in broth can you guys explain the difference in texture and smell? The smell really threw me off of the dry method.

I am always down for another kitchen gadget and have been looking at a Sous Vide cooker BUT I have a tiny 1940's kitchen so I have to be careful about space. Do you find that it is worth the investment or should I just stick to my cast iron for cooking steaks and chops? Also, do you find it helpful for cooking things other than meat? I have a gardening question for you. What do you do if your weather doesn't corporate with planting times? I am in zone 5b in central PA and we are still getting some serious snow and cold weather here, how do you plan around the lingering winter weather when its time to start planting certain things outdoors? Sorry....i guess that was two questions. Anyway, thanks for all your advice and wonderful content!
Not even in zone 5, but I know the unfortunate answer to this. Weather is one of the reasons there is a brisk business in greenhouses, high tunnels, grow lights, plus all manner and size of pots to hold plants while waiting. If it's a field of something, that's a worse answer. Boils down to wait, and hope there is still enough time for the crop to finish. :( Many of the garden veggies, that don't like getting their roots disturbed, tend to do ok waiting in things like the biggest soil cubes, or air pruning pots. With limited grow light space, I have just crammed a handful of seeds into a 5 inch pot before. Squashes, or beans, etc. Only sulked about a week after I was able to get them outside. They also were still just barely getting their first true leaves. End result was that the plants were well ahead of same variety seeds that I planted direct, outside, by the time it was finally safe.

I'm gonna try Open Kettle canning and will be getting a tester for acidity to be sure they are safe.
I have some jars of canned tomatoes from 2017 and just used 2, seals were nice and tight, color retained and taste so good.

Never thought to add heavy cream to my pasta sauce, great idea.
Half an half works well too, I just load up with romano and pull off heat to rest. Pasta holds sauce better.

I love a 24 hour cook on beef in the sous vide then char on the grill. Flanks, roast or higher end steak, it's the best.

You made me hungry! Dinner looks great. I've never used a sous vide - can you talk a little more about that method. Is it only for meats? What do you like about it? what are the drawbacks? Is it just for marinating or does it cook the food as well?

I have a gardening question for you. What do you do if your weather doesn't corporate with planting times? I am in zone 5b in central PA and we are still getting some serious snow and cold weather here, how do you plan around the lingering winter weather when its time to start planting certain things outdoors? Sorry....i guess that was two questions. Anyway, thanks for all your advice and wonderful content!
Not even in zone 5, but I know the unfortunate answer to this. Weather is one of the reasons there is a brisk business in greenhouses, high tunnels, grow lights, plus all manner and size of pots to hold plants while waiting. If it's a field of something, that's a worse answer. Boils down to wait, and hope there is still enough time for the crop to finish. :( Many of the garden veggies, that don't like getting their roots disturbed, tend to do ok waiting in things like the biggest soil cubes, or air pruning pots.
With limited grow light space, I have just crammed a handful of seeds into a 5 inch pot before. Squashes, or beans, etc. Only sulked about a week after I was able to get them outside. They also were still just barely getting their first true leaves. End result was that the plants were well ahead of same variety seeds that I planted direct, outside, by the time it was finally safe.
