    I'm surprised you haven't mentioned or showed the Wusthof sharpening steel with the diamond abrasives. It also works very well to sharpen knives.

    How important is it that you get the angle right when honing? Let's say you accidentally have it at 20° instead of 14°, would that be a huge issue?

    Last time I checked Wusthof knives are 14deg.

    Can you sharpen Wusthof Bread knifes & Sausage Knifes that have a serrated edge ? How would this be done with WUSTHOF electric knife sharpener ?Also is the Wusthof Cleaver 6" that I got in my Wusthof 13 PC Classic set be the same knife angle and the other blades or is it different ? Would I have to get extra angle guides that I could change out to get the right angle for these types of knifes as well as other speciality knifes?

      mick, according to Wusthof, they say their electric sharpener is able to sharpen their serrated knives. You would only need different angle guides if you are wanting to sharpen your Asian-style santoku knives. The cleaver is specifically made with a different material and is sharpened differently than their other knives and will not work with their electric sharpener. I hope this helps!

    Only problem is Wusthof sharpen their knives at 14 degrees, not 15. Santoku's are indeed done at 10.

    How would you sharpen their double serated bread knife?

      Jake, it is quite difficult so sharpen serrated knives - I personally do not think any of Wusthof's sharpeners would do a good job at sharpening that knife. Brod & Taylor do make a unique sharpener that can sharpen serrated knives you can see here: evkitch.com/3nIGzgf - for myself, I just purchase a new, inexpensive bread knife every 3-4 years from Mercer: evkitch.com/3pP0k8z

    Should I get a stainless steel knife or a carbon steel knife?

      Ohhh tough choice. If you're just starting out with knives, a stainless steel knife would be my recommendation. Carbon steel knives are great, but they do take special care to keep them in shape. If you have had stainless in the past and know how to maintain your knives, invest in carbon steel and enjoy that hard sharpness that comes with it!

    I am not sure I buy into honing steels. I think if done incorrectly you can actually dull the knife. If done correctly, the change to the edge imperceptible. I would think honing would really only be useful on relatively soft blades because the edge can fold a bit but Wusthof knives shouldn't be that soft. In fact, some of the newer knives are just as hard as a honing steel so its basically pointless. I think a much better regime would be to strop your knife every 2nd or 3rd use.

      I've bought all those stones and abrasives but I just can't get the hang of sharpening my knives with them. I understand the concept: always keep your blade at 15* degrees and move it the same amount of time per side, etc... but I just can't seem to get it! 😵‍💫 Glad I'm not the only one! 😉
