    Excellent guide. I watched this to use my 15xv for the first time. I sharpened a 12 year old WMF santoku that was super dull. In mere minutes, I'm able to shred paper just like you did. Great video, excellent product.

    Excellent information! 👍😎 My Sushi Chef son-in-law likes my Chef’sChoice 15 Trizor XV .. then he sharpened my knives. If you want that added bit of sharpness his leather strop seemed to make it a scary sharp knife.

    I just purchased one of these at Bed Bath & Beyond for $42 in the clearance section. Only thing is that it has torn packaging, but the machine itself was still new not dinged or scratched! I will use this-and would update!

    I bought the same sharpener 2 weeks ago from Cutlery and More (before this video is published). and it works flawlessly.       I bought it two weeks ago as well. I tried it on my pocket knife, a larger buck style knife, and a typical chefs knife. I don't know if i am putting too much pressure or too little. I also don't get the same sharpness as the video, and the device is VERY loud! Do you think my device is defective or just need to work on my form. I noticed he was pulling it vertical, when i did it i did it at an angle so it rests on the rubber.

    I have the 1520 chest choice sharpener I've seen you showing and I lost my instructions on how to use it especially the back button that says you sparingly . I seen this video now and your sharpener is different but the technique is the same. Thanks for letting me know how now I could use my 1520 chef choice sharpener as the one you just display thank you. Lewis.

    When it was running at stage three, it sounds like the bearings of the shaft are wobbling. Notice the sound when it powered off. I wonder if there is a better quality bearing available. The video was very helpful.

    Using my New Chefschoice Trizor XIV I notice that when pulling the knife through the sharpener, results i can feel the knife "drop" in the grinder when it is almost fully through the unit. In addition it appears to have rounded the front and the back of my Wusthof Classic Santoku. Please advise on why this is happening and what i can do to fix this knife.

    This exact model doesnt seem to be available (at least not in the UK). But Chefs choice is still readily available here... so my question is what Chefs Choice model is this based on? I am sure there will be one without Wusthof branding on it that is exactly the same...
    In my research, Wusthoff is 15 degrees correct? So would any Chefs choice 15 degree work fine.. such as the Chefs Choice Trizor XV Edgeselect Sharpener

    Just recently bought a Wusthof classic 8” Chef. I also got the Wusthof Tri stone. Since it has a full bolster, am I wasting my time with the whetstone? Should I get the electric sharpener instead?

    Any way to prevent dishing the blade towards the bolster? I’ve run a Wusthof Ikon and Mac Professional through this and notice a small dishing effect towards the end of the blade.

      So, are you saying the belly of your knife is starting to flatten out? There are a couple of ways around this. 1) Consider using a honing rod more often than the sharpener. 2) Do your best not "flick" or press your wrist downward, at the end of the stroke.

      Thanks for the reply. The dishing effect is only towards the last quarter inch of the blade towards the bolster.

      There's no way around it, you'll have to grind away the bolster somehow. One way would be to put the knife in a vice and use a file. Or just go out on the sidewalk and grind away.

    Great video! Question, how do you use this machine to sharpen a Wusthof 4603-7 Classic 6 Boning Knife? When I do it the wide part next to the handle stops the wheels from touching the blade until about .5 inch into the blade pull. After sharping the knife it looks bad at the handle end. Thank you

      Yes, this machine's coarse stage is enough to re-bevel the edge to 15 degrees.

    These electric sharpeners say they can also sharpen single-beveled serrated knives. I'm confused as to how this is done without damaging the serrations. Does one only sharpen on one side only? Which side? How would it get inside each individual serration?

      the product has specific instructions for this which only involves stage 3. I haven't tried it yet.

    As far as I know Wusthof knives come with a 14 degree edge on both sides (as opposed to the 15 mentioned in the video). Now, is it a problem to sharpen a Wusthof knife with a 15 dregree manual/electric sharpener, that is, other than the factory branded sharpeners? (E.g. a Chefs Choice 4643 which in itself is a good manual sharpener but with a 15 degree preset.)

      1 degree will make no difference in this case. Because you are going from a 14* to 15*, you won't even need to reestablish the bevel unless you care greatly about knife aesthetics.
      You'll be apexing the cutting edge instantly because you are increasing the sharpening angle. Repeated use of Stage 3 on the sharpener will eventually set the entire bevel to 15*.

    Would you say Wusthofs upkeep is a lot easier in comparison to Shun since you don’t need a whetstone to sharpen?

      You'll need to sharpen a Wusthof knife a lot more often because the steel is soft so it will get dull quicker. However it will be easier to sharpen on your own with a hand held sharpener.

      The Wusthof Asian inspired knives have a different blade angle of 10 degrees. They sell a manual hand held sharpener that will work for those.

      There's an insert in the bottom with a magnet that collects metal shavings. Just check it periodically and clean off the magnet. Works well.

      It's exactly what the name of the device implies: "1520" stands for 15° (which are almost all Asian-stylized knifes, like Santoku and etc) degree edge sharpening, while 20° is all American and most of European/French style blades. Wusthof blade, however, is an exception, as it has an edge done at 14°, so that particular device won't/can't work with those well.
      The 1520 was made simply for convenience, as it automatically does 15° and 20° edges alike, while, in the past, models like 120 could only do, well, 20°, and there was a separately sold model aimed strictly for 15° Asian knifes. It's a merger.

      He was working for C&M. :) Had to say what C&M wanted. Though, we can see the sharpener worked. Provided a very sharp edge. And for people who don't want to spend the time to learn to use whetstones....and for people who WANT to keep the factory bevel of 14-degrees...this is the way.
      I think using whetstones is more a fad among knife-heads. Yes, you get sharp edges but it's impossible to be super consistent stroke for stroke. Since we're not robots. Do we just want a sharp edge? Or, do we feel we prefer to keep that 14-degree Wusthof factory edge? Is that important to us?
      Odd Zwilling/Miyabi hasn't created an electric with a 9-degree angle for their Miyabi Birchwood knives....Or their Black series...

      @@AGC828 Sharpening with whetstones is not a fad for most people as you said, most people would never be able to afford expensive knives let alone a fancy electric sharpener.
      Buying a collection of the Kramer or Shapton glass whetsones is indeed a fad, but thousands of people would be happy to sharpen on a dollar store whetstone.

    Most Wusthof high end knives these days come with a factory blade angle of 14 degrees on each side, for a combined 28 degrees, not the "15 degrees " as falsely stated in the video by Ryky. Wusthof made that change from the former European 20 degrees, several years ago. It's significant because, unlike the Chef'sChoice Trizor XV sharpener, , which is, in fact, a 15 degrees grind on each side, and was rated number one by America's Test Kitchen, Wusthof directly partnered with Chef'sChoice and EdgeCraft, to produce this more accurate 14 degrees version for their knives. So although Ryky is mostly accurate when he says "This one here is set up so it matches the factory grind as much as possible", It actually matches the factory grind 100% perfectly !!!
    It's not even logical for Wusthof to put their name on a knife sharpener that couldn't even meet their own specifications . Moreover, Wusthof recommends , on their own website, to use a knife sharpener machine from the SAME manufacturer, so that it matches the manufacturer's knife edge angle. This may be made by Chef's Choice, but that's why it has Wusthof's name on it.

    Some of the stores that sell 120/130/1520/2100 imply that the "soft/flexible" third disc can also be used with ceramic knifes.
    Can any of the aforementioned models actually safely work with ceramic knifes also? I (mainly) use ceramic knifes, so it's important that chief's choice device doesn't break/chip any of my ceramic knifes if it's actually supposed to support them too.
    Also, according to specs, there's a magnetic collector for metallic dust/residue in these devices, which should be cleaned out occasionally (like a dust bag in vacuum cleaners). If these electric sharpeners actually support working with ceramic knifes, then where is ceramic residue supposed to go (it's not metal, so it obviously can't be caught by the magnet in the collector)?

      After a leather strop my dad kept his 7 cut- throat razors in perfect shape and used one for each day of the week. As a callow youth I used cutthroat 0:06 razors but my strop looked like 0:06 0:06 06 Edward Teaches’ scarface.

    As you can see it has three stages. Stage one stage two and stage three. You start at stage one and then you move onto stage two and then you go to stage three.

      At least tell people not to use this thing on expensive Japanese knives. It has a single angle preset to the machine. Can you imagine someone taking a Masamoto KS to this thing?!? Or any nakiri, or kiritsuke or nicely ground gyuoto even !

    Garbage machine. The abrasive wheels get clogged real fast and the "cleaning" system is next to useless. My advice is not to buy one. Stick to water stones.

    The best technique to use is to place the electric sharpener in your right hand and throw it in the trash bin. Obviously you don't think much of your knives by using it. Get yourself some good stones and sharpen the knife properly. Your knife will thank you for it.

      I am a professional sharpener and I don't see any harm if people want to have simple machine, stones are not for everybody it took me 2 years to master everything right with stones

      I have to say that this machine works impressively and I use it quite often; and I'm someone who has a collection of 30+ waterstones.
      By the way, the guy in the video also has his own sharpening channel where he uses stones.

    Cutting paper does not proof anything. A dull knife will cut paper as well.
