Another tip; Before grilling, skip the boil and soak ears, husk & all in water 1 hr, then grill, husk and all. This helps steam & char w/o burning. 🌽 N Joy!
So many people on here saying "you did it wrong "! I've had elote in several regions of Mexico and every one of them does it differently, it even varies from family to family in the same region, so there is no "wrong" way!
I remember when I used to live in Mexico my grandfather would always go to his corn field and get some corn, he would come to the house and grill the corn with the leaves on them it gave the corn such a good flavor.

im mexican an we make this very often especially during summer when we are bbq outside my mom grills it with some of its leaves on still just so it can actually cook all the way thru an still br crispy an grilled just not burnt an then of course we add all the toppings mayo, cheese, lime, chili sauce! the best!

Each individual kernel is pollinated by a piece of pollen falling on the silk. Sometimes pollen from a neighboring field will blow into the sweet corn patch and land on the silk. If the neighbors field is a different variety, it could make the kernel a different color.
In California , we eat this type of corn a lot . We buy it from the man on the bike/cart for $1 per corn !! I love it when he rides through the neighborhood selling his Mexican Corn :-)

Not a farmer, but I believe I know the answer to some of the kernels being different colours. Each kernel is actually a seed which carries the genetic code of the corn. As with all other things which have two parents, the genetic code of corn's offspring is inherited from the crop's mum and dad. In the ideal scenario, these are not genetically modified, and they will have some variation in colour. When inherited, the colour gene is randomly distributed among all seeds, giving each its own hue. This can lead to the corn having a beautiful marble-like look, sometimes including a dozen of colours and hues! Cheers!

Each kernel has a different genetic make up but the 'container' for the DNA of the seed should not be modified by the seed itself and we are seeing the 'Container'. not the seed DNA. Looks to me like pollen from a yellow variety of corn drifted onto the field of white corn. When I grow my favorite white and yellow varieties of corn too close together this is what happens.
Jeremy, the kernel is already the offspring, just like the cherry is the offspring of the cherry tree. It's very common to think that when something grows on something, it's the same entity, but the fruit of a plant like this starts growing when the male pollen has found it's way to "impregnate" the flower and the DNAs have combined. The "ear" itself comes from the female plant, but on that ear, the offspring grows. Remember, not the ear of corn is the fruit of the corn plant, but the kernels are. We humans just happen to remove the fruit from the plant with it's stem and husk attached.
In corn it's a classic example for transposons in the genome. To sum it up: the DNA does not have to be different by what genes it contains, but by where the genes are located on the DNA. Well I had it with some awesome hot salsa they had too and it was so different but delish, I bought 5 to go and that awesome salsa.
I am mexican. You can find these everywhere in Mexico city, they get tastier because pf car pollution xD. I am amazed of accurate the recipe is. The only difference is that you put mayonesse and chile piquin by separate instead of mixing the ingridients.
It tastes somehow different, here in mexico we have like houndreds of different colors in corn, and everyone tastes a little diferent, for this recipe i have tried yellow and white corn, and im stick with the white one, but you can make it, still awesome.

The different colored kernels are because each kernel gets pollinated by a different pollen spore each. The farmers do their best to keep only white corn pollen floating around, but a yellow one will sneak in from time to time.

If you're "just throwing your way out here" you can't call his way wrong, otherwise it's a correction of his recipe. And if you boil corn, it's better to add a little salt. I agree with the parmesan and lemon, since they're easier to get around here but using plain mayonnaise instead of a spiced one will definitely have an impact on the taste. I would even recommend using fresh chilies for extra spice.

Made this earlier for 4th of July bbq to go along with spare ribs and the family absolutely loved it. I've wanted to make this for a while, and had all the ingredients in pantry/fridge, except i subbed feta for the cotija and added cilantro. Will never make corn on the cob any other way again, amazing!
for authenic street elotes, you don't need all of this. just boil the corn, stick a thick bamboo skewer (I swear they use chopsticks) into an ear, slather on plain mayo (extra points if you use a plastic utensil ghettorigged in the lid of your mayo jar), then tilt the ear and spoon on parmesan cheese(you have to use the "fake" parmesan for authenticity, again bonus points if you store said cheese in a large Tupperware container), then drizzle with squeeze butter(parkay is what I normally see). now I order mine with no chili but if you want, sprinkle with chili powder. now it may not be gourmet or fancy enough for some of you foodies, but I've lived in so cal my whole life, and that's how the elote man does it. don't get me started on raspados.
+Brett Ellison the american version sounds very fatty, in mexico people who sell these carry around a big trike with a boiler full of water and corn cobs, then when you order one they grab one out (freshly made ofc) smear Helmans lime juice mayo, some cotija cheese and if you want powder chilli, and thats it, no roasting, no butter, just boiling. easy and cheap deliciousness, i´m an esquites guy tho
going on now? Corn has been modified for decades lol...it's the most engineered vegetable there is. And I wouldn't worry about GMO because they're doing it to birds, trees, insects, and food...All you can do is sit back, watch this man cook his awesomeness, and be happy you had a chance to live a life.
John, I took your advice and threw away the spices plus a lot more. I found expiration dates in the teen years and the furthest back one was 2002. I got an empty bin and started pitching. My spice cabinet looks a whole lot better. By the way, the corn was fantastic. My grandsons that I was preparing it for I loved it.
Sort of correct except the way you make REAL mexican corn in you boil the corn (white) till cooked then add a thick layer of mayonase then you coat in grated cotija cheese, then you add butter but you add butter in a blue bottle called parkay and add chili powder but make sure its mexican and has no lime or garlic just pure mexican brand I recomend one branded "pico de gallo" it is in a yellow bottle tastes real good there you go :)

The elote MUST come with mayo. But I usually get it in a cup. Lots of Tajin of course.

You can sometimes get this in a cup, cut off the cob, still with the mayo/chile, and simply eat it with a spoon. One of the great Mexico street foods!

I agree with the parmesan and lemon, since they're easier to get around here but using plain mayonnaise instead of a spiced one will definitely have an impact on the taste. I would even recommend using fresh chilies for extra spice.

Made this earlier for 4th of July bbq to go along with spare ribs and the family absolutely loved it. I've wanted to make this for a while, and had all the ingredients in pantry/fridge, except i subbed feta for the cotija and added cilantro. Will never make corn on the cob any other way again, amazing!
We make this at home but we don't we lime and we cut the kernels off the cobb to make it like a salad.

for authenic street elotes, you don't need all of this.
just boil the corn, stick a thick bamboo skewer (I swear they use chopsticks) into an ear, slather on plain mayo (extra points if you use a plastic utensil ghettorigged in the lid of your mayo jar), then tilt the ear and spoon on parmesan cheese(you have to use the "fake" parmesan for authenticity, again bonus points if you store said cheese in a large Tupperware container), then drizzle with squeeze butter(parkay is what I normally see).
now I order mine with no chili but if you want, sprinkle with chili powder.
now it may not be gourmet or fancy enough for some of you foodies, but I've lived in so cal my whole life, and that's how the elote man does it. don't get me started on raspados.
+Brett Ellison the american version sounds very fatty, in mexico people who sell these carry around a big trike with a boiler full of water and corn cobs, then when you order one they grab one out (freshly made ofc) smear Helmans lime juice mayo, some cotija cheese and if you want powder chilli, and thats it, no roasting, no butter, just boiling. easy and cheap deliciousness, i´m an esquites guy tho

The street stands and good taquerias use Tajin instead of the chili powder/paprika mix. More hot is more better

John, I took your advice and threw away the spices plus a lot more. I found expiration dates in the teen years and the furthest back one was 2002. I got an empty bin and started pitching. My spice cabinet looks a whole lot better. By the way, the corn was fantastic. My grandsons that I was preparing it for I loved it.

If u don't like the idea of mayo on corn just subtitute for sour cream, and/or nacho cheese, cotija cheese, chilli power and lime.. just as delicious!

Sort of correct except the way you make REAL mexican corn in you boil the corn (white) till cooked then add a thick layer of mayonase then you coat in grated cotija cheese, then you add butter but you add butter in a blue bottle called parkay and add chili powder but make sure its mexican and has no lime or garlic just pure mexican brand I recomend one branded "pico de gallo" it is in a yellow bottle tastes real good there you go :)
