    I like to just eat slices of the Parmigiano as well. You could probably carry some with you and not worry about refrigeration.

    Second Generation and while you are correct and as a child we always hand graded imported cheeses they were the real deal. However Europe wants us to not have any of these cheeses because they think as you said we're stealing their name. While I understand they're concern this would mean that the cost of us to get our cheese would go up immensely. And it's not just Parmigiano it's provolone it's blue cheese you name it. I'll eat my North American cheese thank you

      I agree. Well said :- ) Taste is where it is at...
      I suspect that there a many people from the so called non Parmigiano areas who make it better than the original....
      Maybe the restricting of using the name Parmigiano has something to do with greed and selfishness and not too much with taste and performance...
      But hey... I could be wrong... I vaguely remember being wrong once :- )
      Maybe...
      A good way to judge the better product is to buy 5 or 6 types of Parmigiano and 5 or 6 types of quality Parmesan and then ask some trusted, honest friends to help you do a blindfolded taste test amongst some more of your other friends including yourself who love these cheeses.....|

      Maybe even do this with champagne or port :- )
      Did I mention??? that I suspect that maybe it is more about greed than taste in keeping the original names locked down/out/away from healthy competition

      @@heicoweidl9274 Can you do it better? When better is subjective taste, but you can't make parmigiano reggiano anywhere else in the world.
      The reason? The mixture of grasses that the cows feed on that produce that particular milk used to make parmigiano reggiano.
      To make it the same you would have to reproduce the same soil, the same climate, the same area where only cows of a specific breed are raised.
      Can you do it better? I don't know!
      But I do know you can't do it the same. To create the same combination of material factors would be a divine work.

    1) Grana Padano Cheese is the sibling of Parmigiano Reggiano, and in the world it is also more widely sold than Grana Padano.
    2)Never buy this kind of cheese already grated or flaked. Only buy pieces where there is a rind, since the rind has the original stamp written on it. In the jarred packages you showed in the video they throw everything in, there is no guarantee of quality. You can only trust, but if you trust a dealer you've already made a mistake. :D
    3) Do not buy it when it is less than 24 months old. Yes you can eat it, it is also good when it is young, but the perfect time is after 24 months.

      I like to eat the crust. It's much chewier so it is effectively savoury, edible chewing gum!

    I love your videos and enjoy listening to them in the background those times I have simple work to do on the computer that still allows me the brainspace to listen to what teach me.
    Parmigiano or Parmesan...

    Parmigiano reggiano is Italian. Parmesan is Amercan. I prefer pecorino romano!😉
