- Like the classic combo of peanut butter and jelly, finally, the great taste asparagus meets the sweet goodness of pimento! What? That’s not a thing? Hmm, I severally misread the room here. At any rate this light little tea sandwich from Salads and Sandwiches of 1917 has spared us the use of canned asparagus. And for that I am immensely grateful.

Yes... But l see lemon zest added as a topper too often. Lemon zest should be added to the mayo or butter the night before, to let the flavors meld.
I think taking it in a pimento cheese direction by adding shredded cheese might work to plus it

I would make it with pimento cheese and add a slice or two of crisp bacon. It looks good!
I would plus that up with yellow mustard. Yellow mustard and asparagus go very well together.
When I clicked on this my tired eyes had read " pineapple and asparagus sandwich". I was both relieved and slightly dissapointed to see the pimentos!

I would plus up with shredded cheddar and american cheese mixed with the mayo (preferably Dukes). Any southerner will then call it a Pimento Cheese sandwich😂Cool about your book!

I can imagine ladies in the middle of WWI sitting together worried about their husbands in French trenches with this on the table. Nowadays it looks like a dip.

Nice book cover an seeing as how I watch all your test sandwich's pretty sure I know what it's about 😁 don't think I could bring myself to eat my favorite veg in a sandwich , having typed that would have eaten it with a certain guilty pleasure an not having your spice mix some salt an pepper an um a bit of lemon , mustard , tiny speck of sugar to the mayo , Good job 🙂
I know we don't like to plus up with a protein but in my opinion. Shrimp and lemon pepper would have been a good addition.

There is only 3 things I would do different. I’d substitute the lettuce for spinach leaves, and plus it up with dill & celery salt in small quantities.
I always thought they didn’t have bread like that back then- like no sliced bread. I’m probably wrong. This sandwich looks good though.
