A good substitute for almond flour is OAT flour that I make by putting dry quick oats into a coffee grinder, it just takes 4 or 5 seconds and gives the finished bars a nice flavor and nice texture.
I've been making a variation of these bars for years, only I mix in a scoop of protein powder along with oats and peanut butter as my base. I use whole rolled oats instead of grinding them, but that sounds interesting. I also use agave nectar, but you can use honey or maple syrup. I also sometimes take a dark chocolate bar with a higher cocoa percentage and dice it up into small chunks and bits to mix into the base vs using chocolate chips. I do use chocolate chips and maybe a tablespoon of peanut butter for the topping. If you use too much PB the topping will be too soft and will be messy once it warms up while you are eating it. When you add in the protein powder you end up getting a nice homemade protein bar that is much healthier and tastes much better than store bought bars.

Maple syrup is better than cane sugar as far as a blood sugar spike but it's not too far behind. JIF and the like have a lot of processing to get peanut butter to that consistency. Lots of unhealthy ingredients on a JIF label. Regular chocolate chips do have some sugar added to them. Don't mean to knock it but healthy-er might be a better description.
These are all true, but the things I used weren’t exactly those. I didn’t use JIF, I used Kirkland natural which only has peanuts and salt. I used 80% dark chocolate chips which have a lot less sugar. But yes, healthy-er might still be accurate
