Ancient Grains Conference 2022 Baking Demonstration

  • The 2022 Ancient Grains Conference featured a hands-on baking demonstration in the Oliver Kelley Farm kitchen. Hosted by Laurie Scanlin, Principal Food Scientist at Ardent Mills, the participants were provided instructions with how to work with the tools and Ancient Grains ingredients for the baking exercise. They then created their own dough and used it to prepare flatbreads and muffins with ancient grains. The attendees then were able to taste test the foods they created, and they turned out quite well.
