  • How people choose the foods they eat is as interesting as it is complex. Food choices aren’t just decisions about safety, nutrition, and calories, but are influenced by culture, religion, identity, familiarity, and many other factors.
    In this talk, we will discuss the psychology of food choice and the many heuristic “short cuts” we often use to choose what to feed ourselves, our families, and our guests. We will touch on both culturally familiar foods, as well as on consumer acceptance of new and future food sources and processes.
    This seminar was presented by Professor William K. Hallman of Rutgers University on 24 January 2024.
