Mom made "Gobs" for her coalminer grandpa. Chocolate cake with cooked icing filling inside, wrapped in wax paper for a treat at lunch. She grew up in western Pennsylvania. Lost her years ago but can't wait to try this version! Much love from Oklahoma!

From the UK - never had a whoopi pie but will give these a go, but using GF flour as allergic but hope they’ll come out the same. Never heard of a flour based butter cream either so that’s another fabulous recipe - thanks Louise.

My daughter just made a 2 ingredient pumpkin spice cookie. The recipe uses pumpkin purée and a spice cake mix. She saw a video online and I had my doubts, because you just use the cake mix… there was no egg or oil. I thought for sure that they would fall apart. Amazingly they tasted great and stayed together very well. They were moist, just a tiny bit sticky on the outside. The spice wasn’t overwhelming and they were not too sweet. They only thing that was a bit odd is that they didn’t flatten at all during baking. They stayed in the same shape as the cookie scoop… Small and high. I would love to use this with the icing to make whoopie pies. I need some help! Do you think that adding a few eggs and some flour would help to make them flatten out a bit while baking and make them less sticky?
How come you didn’t make the hot cream in you hot and cold blender? And If you you had a regular Ninja blender with the dough attachment you could’ve made your cookie dough in that also…
Never make them, but did buy one at the Amish store....never again..... they do have the white frosting inside but I don't like theirs either I think they put Crisco in their frosting....so after one bite I took all the frosting off and just ate the cookie part..... ....why would anyone use crisco in their frosting ?? I absolutely hate crisco in anything....thank goodness you don't use it.....it is so bad for people.....but Crisco is great for a light if your power goes out.....just light a can of crisco.....you have a great light..... I love cream cheese frosting or a maple frosting...🤣
