Hi Mark, it’s strange when you mentioned no t riding the Allez for a while. The last time I rode my Defy was when I joined the Cheddar ride with you all them years ago. I actually sold it and bought it back a year later. I’m always on the gravel bike but I must get back on the Defy 🙂

Those poached eggs looked great, I usually spin the water before dropping them in as it wraps the white around the yolk. I base my best cafe stops on how good their eggs are.

Take it steady with the covid recovery and keep an eye on your exercising heart rates. I fell ill a few days before Xmas and after 6-7 days I thought I'd beaten it but returning to the bike my HR was very erratic and unpredictable. The Nice finish made for a refreshing change but as a former Paris-resident I'll be happy when it returns to the old cobbled Elysees circuit.

I don't like tattoos but if it makes you happy, do it. COVID is a bugger. Hopefully you have gotten over the worst of it now. I do poached eggs very simply exactly the way you do it. It works every time. The key is to not have the water bubbling hard, just a gentle simmer. I like mine a bit firmer than you. I don't time it, just do it on how they look. Probably four mins. I did a longish walk today along a beach near home. It was warm for Scotland recently...20C...so I even went in the sea for a swim. Refreshing.

Hey Mark, only just watching, re the poached eggs....does the type of vessel you dispense your eggs into matter? Steel, porcelain etc? Just wondering,,,,,not that I have poached eggs. :)
Didn't take the covid jab, people around me who did are now knackered,keep going down with Covid,it seems they don't have the immune system to fight it. Mark looks like a fit guy,eats well,yet keeps struggling with his health, bet with his job he has to keep taking the boosters.
@@geoffwalmsley3066 hello Geoff, it’s totally bizarre isn’t it! I initially had the first two jabs back in 2020 but I’ve never had any of the boosters and I never would now for sure. Thankfully I’m over the worst of it now but that past 6 or 7 weeks were awful for colds & covid! Thanks for watching mate 🙌
Same around me, no jab and my wife never took it either, neither of us are every really ill with colds etc but almost everyone I know who has taken the jabs is constantly suffering with endless colds flu type issues. A guy I ride with has had every booster and has been sick with one cold after another for months and is so weak on the bike now it’s ridiculous.
Guess what I just had for brekkie! They worked beautifully thank you 👌👏

I saw a video of a lady stirring the water like a whirlpool before adding the egg. It kept the egg together and in a nice round shape.
