Great video, Linn! Your true appreciation for this unit really came through. I love purpose-built machines that are uncompromising in quality. This seems to fit the bill and I'll be picking one up for the kitchen.
Jag är tacksam för allt du ger oss.

So 10° at minimum, means you can sharpen Japanese blades on the 12° bevel no problem. That's a big plus in my book. And the audible pitch change of the grinding is pretty re-assuring too. And 7:51, always the true test, single sheet of printer paper.

    • @darbinorvar
      @darbinorvar  Рік тому

Eric, I haven't tried to sharpen at the 12 degree bevel, but there shouldn't be a problem at all. Thanks for always leaving such nice comments.

I check sharpness of blade by making movement like i am combing my hair with blade. Sharp parts of blade will pinch hair, dull one will slide .Seems better than nail test

Thank you! Enjoyed your video very much and very helpful. I'd love one, but way overpriced. I'll stick to my antique steel from Smithfield Market for the time being.

Hello, thanks for showing! I have several knives and one is a Japanese axe type of, its height is about 9 cm in the video you showed 6cm, is there a way to remove the holder for higher knife like mine? otherwise I'll not use on that one and use on all the others. Last question, where can I buy this tool? do you have any promo code?

Also my thoughts on this. I suspect not.
      e.g. it must exclude cleavers.
Also a serrated knife you take a pass to remove the absolute minimum from the flat side until it just removes material from the bottom of each serration arch and honing serrations is a delicate process if you want to preserve your hone wheels edges.
      I use a T8 in a professional setting daily.
To some businesses the price makes sense for the bulk of your knife use maintenance.
I suspect it's the T4 motor so it's probably 30 minutes use and 30 minutes rest too.

Yeah a custom T4 would cost a little more and be upgradable in any direction you wanted to take it but not something you would have in a kitchen setting.

You'd be better off testing the edge on paper alone than using your nail, you can open it up for fungal infections, as I found out the hard way.

''butchers steel'' does not sharpen your knife genius it only re aligns your edge after it has rolled...

@@SumikoIF Sorry that is just silly Butchers steels are serrated and remove metal . I can take a steel and a blade that cannot cut cabbage and SHARPEN it so that it can slice paper normally within 5 minutes depending on the steel . OF COURSE STEELS SHARPEN , I suggest you look up what sharp actually means

Diamond wheels aren't designed for excessive pressure. The idea is you preserve the diamonds and let them do the work.

It runs at a slow speed so that the steel does not get hot.
