    I'm a vet student and I literally just took a final on renal systems a few days ago so coming across this video now is insane. That is no doubt cow kidney, from what we learned only cows and marine mammals have kidneys that have lots of lobes like that. Typically animal (including our) kidneys start off with lots of lobes like this and they all fuse together as we age, but some animals like the cow remain multilobular into adulthood!
    Also that membrane that guga peeled off is some of the toughest external membrane on any organ, if you peel it and try to stretch it it won't give. The kidney filters blood and creates urine, so it undergoes a lot of internal pressure, so whatever membrane coats it needs to be really tough to keep it intact! It also (to an extent) protects the kidney from rupturing if the body undergoes trauma, like getting hit by a car.

    From the way you prepared it, of course it will “smell”!
    Kidney produced urine from “inside”, but you only wash it on the “out side”.
    You should cut it open before you washed and marinated it.
    Another thing is you should remove the white part inside the kidney when you cut open it.

      @@luns486 Is not. It's mostly water from de meat. But if you don't wash the kidney in the inside, you have left urea crystals (and another residues) and that crystals left a strong taste (almost ammoniacal). You should cut it into strips, remove every white stuff and rinse it serveral times. Then you let it rest and then you can brine it. I also recommend do it slow-braised whit some vegetables (onion is a must, carrot is recomendable) and add some wine at the end of the cooking. If you try to pan-fryed (like Guga did) is going to remain raw in the center and you gonna burn the outside (you can't have a crust with this meats).

    Being raised in a Panamanian home, my mom would cook beef kidneys quite often when I was a kid. I knew exactly what it was from the thumbnail. It's definitely an acquired taste. 😂

    Well, I didn't expect that it's from cow but I used eat a lot of kidney from goat, and you have to stir fry or bbq it. that charcoal flavor and cumin will absolutely cover that weird smell. And of course, you have to remove that white part from inside, and wash it thoroughly.

    I would highly recommend a 24 hour refrigerated whole milk bath. Organs do in fact retain blood, and other things you don't want to know about. Once that its done, you're going to want to drain it and rinse and put it on a cooling rack for 1 hour in the refrigerator.
    Use, salted butter (real butter) and quite a bit of it when you're cooking it. This method + milk bath will remove all the nasty flavor. All of it.
    Sear on both sides in a pan that is just barely smoking. 1 minute each side, turn down to low. Add onions and garlic. Drain excess juices, deglaze the pan. Use butter, milk and flour to make a heavy gravy.
    I live in Iowa, United States. Very large beef and hog production state. We eat organs like it's candy. Rocky Mountain Oysters anyone?
    Every step from preparation to cooking, needs to involve milk, it kills the enzymes that make the smell, and draws out blood, and other liquids that can be retained by organs even through thorough processing at a meat factory.
    You will have an Onion/Garlic flavored meat, with a basic gravy that will taste great.

      here in argentina eat a lot of organs like the kidneys and heart and no put in a bath of milk wash a lot with water and go to the asador ( i dont know how says in english)

    Leave it overnight in milk, you rid of smell completely and make it super tender... And you really have to take all of those white parts away whatever it is, every single bit. This thing is disgusting or awesome depends how u prepare it..

    In Argentina it's actually pretty common to eat grilled Kidney when preparing a whole asado.
    Leave it for 30 min in your fridge with plenty of lemon juice and then grill it on medium heat with some "provenzal" for about 20 min.

      @@filipedeoliveira6657 it's good, we eat it like a side dish or a snack while you wait for the real meat.
      I would also recommend "chinchulin" which I believe is the cow's intestine.
      You wash it, and then you repeat basically the same process with the lemon juice (it comes out a little bit more tender).

    Pro Chef's tip - Soak the Kidney in Milk instead of the Brine; Wash and then season or brine them again... it will reduce the funk by a much larger factor than just washing or brining alone. Also if you want to pan sear it and use it like a steak, try butchering them down by following the vessels where the fatty white parts are. Each lobe of the kidney will have a vein so you can trim that out and then cut manageable pieces. Lastly, coat them in a seasoned flour and pan fry in clarified butter. Try them that way and get your cousin to try them again. I bet you he will change his opinion. Much love from Canada

    If Anyone wants to know how to prepare this meat, look for any videos from argentinean asado channels, you can look it up as "riñones a la parrilla", there are a couple ways to cook them. But the most important part is when you are cleaning them. Usually, either a mix of water and vinegar(alcohol base, not apple o wine vinegar), lemon juice, and salt. This process is crucial, and need to be repeated either 2 or 3 times. Kidneys have to be crispy, and thoroughly cooked (in my opinion), for them to taste the best. The best way is to grill them already sliced, and removing once they are browned. In Argentina, organ meat is a regular thing when making asados, so the cooking methods are very well developed for the meat to taste the best :). Saludos de Buenos Aires, Argentina.

    It's been a while since I've had a steak and kidney pie, but I remember it being pretty good. I can't remember if the kidney was fried at some point first, but it was definitely stewed, so I imagine the sous vide one is going to be better.
    Now to see if I'm correct.

    In Italy we call them “rognone” and you have to remove the connective white central tissue for let this eatable.
    Another tips is not to overcoock them
    Try to let rest in milk for 12 hours and after searing and baste in butter

    In Germany, we use milk or buttermilk to cleanse kidneys. It is a very simple way. You can't prepare kidneys the way you have done it!
    The best way is sour kidneys with fried potatoes or spaetzle like we eat in Southern Germany!

    Here in Uruguay is part of our BBQ. Cut it in halves along the axis, salt and pepper. Put them over medium heat over charcoal, 30 minutes per side. Lemon juice during the process and before eating. Also sweetbreads, intestines, sausages and morcilla before the meat.

      @@natteI I'm from Uruguay and yea grilled is the best, if you don't like the kidney powerful flavor you can put it in salted water with vinegar to get most of it, it mostly is just getting used to it.

      @Bacon & Eggs Wash it out and remove all grease from the center and the membrane, let it sit 20 minutes in lemon juice, slice it (dont chop it), and grill both sides, salt right in the grill, not before. When flipping to the second side, add a mix of garlic, parsley and olive oil on the top and finish the cooking with no more flipping. Needs to be well done, not medium nor rare

    Delicious sweet breads!! I usually poach them in aromatics, stock and milk until medium rare and then remove the membrane and pan fry with mushrooms shallot garlic cherry tomatoes and herbs de Provance. Then I deglaze with vermouth and finish with bordelaise and Dijon mustard

    I think it is kidney. As an Asian chef, I strongly recommend you remove all the white substances inside it, the "aroma" of ammonia will sting your nose if u don't do it and you don't hv to soak it in spices brine if u hv removed all of the white substances. Moreover, the way we eat it is stir-fry, u marinate it will soy sauce, sugar and cooking wine and then u turn to high heat (around 270℃), oil in, stir-fry some garlic, shallot and pickled vegetables first and then put the kidney in, stir-fry it for 40 to 50 secs (depends on your wok's temperature) and then serve it. (Remember to thinly slice it)

    Being from England, we use midneys with steak (stewed) in a pie. Thing is, when I've had it I cut it til there are no white bits left, then with a couple of bits of stewing steak seared on all sides and then put together in a stew to slow cook it softens the kidney and gives it a very mild flavour.

    Never had ox kidneys before but I eat lamb kidneys pretty regularly, my local supermarket sells them pretty cheap. They already come pre-slit & pre-rinsed so the flavour isn't strong, pretty mild & very delicious, especially when pan seared in butter to medium wellness. Also steak & kidney pie made with golden brown buttery puff pastry, mushrooms, lamb kidneys & kangaroo fillet with a nice, rich gravy inside is absolutely amazing. Having kidneys & kangaroo fillet with mushroom sauce for dinner tonight, delicious.

    Guga, hi! I’m from Ukraine and we eating everything here. Every time just boil it for long time with some herbs ( change the water few times if u wanna left the smell ), slice and pan sear with some onions and cream/sour cream ( even Mayo sometimes).

    Soaking it in milk for 10-15 mins will help get rid of the funky smell & taste. Then rinse with water, season and cook.

      You need to soak kidneys in water, and boil them afterwords. Then they're ready to cook.

    Ok, that's a Kidney, a very popular dish in Argentina's parrillada, we normaly put some salt and right to the bbq with no direct fire. Then when is cooked on boot sided we cutted on the middle to finish cooking. Very tasty but not for all. I love it, Also yo can seal it and fry and add some withe wine and some greens if you like.

    In France we call these "rognons" But these are in fact just kidneys.
    When properly prepared by removing the white tissue and bathing them in milk for a long time, you can cook them and these are super duper delicious with some garlic, parsley and wine !

      In Spanish is called Riñón which sounds similar to rognons ("rignons"). You are right, if it is properly prepared it is delightful, here in Peru is common so we don't have problems eating it, also liver or cow stomach. We have such a good dishes made with those ingredients.

    It needs to be fully disassembled and all the white parts removed. Next cut each of the pieces in half to allow full penetration when being soaked. Put in a 50/50 mixture of milk and heavy cream and allow it to soak for overnight. Remove from the milk and immediately rinse and place in a salt water brine of 1 quart water 4 tbsp. Salt and 2 tbsp sugar and soak again overnight. Remove from the brine and slice into 1/4 inch pieces. Dredge in seasoned flour in beer batter with a 50/50 flour cornstarch mixture. Deep fry in 375°F oil until golden brown.
    Goes good with a good garlic Aioli with a little bit of lime juice and zest.

    Split it _before_ you brine it, the outer membrane mostly prevents the brine from working. Also, don't pan fry it, roast it so the juice that comes out goes away. Can't say it makes it _good_ , but it's at least eatable.

    First you boil it in water, salt, onion, and garlic and Italian spices. Once it breaks the first boil, drain cloudy water and wash and re boil one more time with new clean water until tender. Then drain and proceed to pan fry it add garlic salt, cumin, and black pepper, onions, tomato and your favorite chile serrano, jalapeño etc. That's how my dad and mom cooked it when I grew up in Mexico, hated the smell when boiled, but loved the taste my parents achieved with that.

      Yeah onions can make a wonder. I love all kinds of liver but chicken liver. Somehow it tastes different and it is not for me. But there is a dish here in Hungary which is basically chicken liver with a bunch of onion sauteed in a pan and it is pretty good. The interesting part is some liver tastes good without soaking it in milk (pork,duck,goose) but some of them has to be soaked (like lamb) at least for me. I guess the same stands for kidneys.

    in my country (vietnam) we boil it
    1. season the water first then put it in until it’s cook ( no blood means it’s cooked )
    2. take it out and let it cool down
    3. while it’s cooling down, make the dipping sauce
    4. very simple, put normal salt, pepper and lemon juice and mix it together ( 60% salt, 10% pepper, 30% lemon juice )
    5. after it cool down cut it into bite able pieces.
    6. enjoy

    We make steak and kidney pie in Britain, it works well when cooked in heavily seasoned gravy and onions. It is an acquired taste for many too, but far more palatable than just trying to eat it as is, even in tacos.

    That is a classic here in Argentina. You have to clean its membrane and the fat in the middle, brine it in coarse salt and lemon juice for about 2 hours and then grill it whole over an open flame. I love this so much.

    Not cleaned properly guga. Have to do a 24 hr milk bath to remove undesireables. I enjoyed it as a child. As I am older, I realize the hard work of the prep. This way makes it very strong. I tried this way once and cooked it in its own sauce. It was VERY strong. I sauteed with thyme, garlic, onions, sweet pepper and went crazy with some scotch bonnet pepper. I cried while eating it lol. I was so conflicted 😂

    In the UK, steak and kidney pudding and steak and kidney pie are extremely popular and commonly eaten. The kidney and other ingredients are stewed for a long time after frying. You're not supposed to eat the white bit in the middle.

      Absolutely! I've had kidneys all my life and have never encountered a harsh smell. Probably because they boil it during preparation, and removed ALL the white parts, and sliced thin BEFORE cooking/searing. I love kidneys and have them at least 3 times a month. Never an issue.

      Not the best way for me. Best to only use veal kidneys first, full grown animal is too smelly. Fry them 2mns in olive oil after cutting in small cubes. Deglaze and flambé with cognac. Add Dijon mustard, thinly chopped onions, parsley, bouquet garni, white wine. Cook a further 8mns. Finish with salt, pepper and crème fraîche. That’s tasty!!

      Yep, chop it fine and mix it with some red curry paste and fish sauce, and shallots. I don't know what it is, but it will probably taste good.
