    In today's episode we are going to discover the Bengali way of life through food, anecdotes and references. We are curious to learn more about the culinary scenario over here. To assist us in this exploration, we are joined by two genial souls who like any true Bengali are ardent foodies. Restaurateurs Piyali and Sunando Banerjee, have translated their passion into profession through their culinary venture named Hanglaatherium. So braced yourselves for some amazing insights, great company, endearing interaction and of course some delicious food.
    The agenda for the day was a visit to a local market and then to try a usual Bengali meal. Hence we started with visit to the Gariahat fish and vegetable market. Fish is the protagonist of the rich and vibrant Bengali cuisine. They can't imagine a meal without it except for those religiously significant days when consuming fish is prohibited. Their cogent love for fish gets reflected in the busy and the chaotic scene at a fish market where their enthusiasm peaks as they select the best catch for the day.
    As we stepped inside the concrete precincts of the Gariahat Fish market with our host Piyali, a regular visitor to this place, we were thrilled by the sight and smell of the fresh and live mind boggling variety of fishes. Piyali walked us through the most popular ones that goes into the making of many popular delicacies. So there was Rui, Katla, Pomfret, Bhetki, Tryangra, Illish, Magur and many more. Piyali's deep knowledge about the nitty gritty of the cuisine and her enthusiasm to acquaint us with the same made us fall in love with the experience. As we made our way through the sea of fishes, we got enlightened about their uses and benefits.
    Apart from getting familiar with the identities of the fishes, we also came to know about the some socio cultural facts about Bengali masses through the reference of certains fishes. For example how rui or katla fish is a means of cementing the ties between the bride and the grooms family. Then we came to know about the two categories of Bengalis and their long underlying rivalry that has even spilled onto the football fields. This is about the Ghotis and Bangals, their general preferences and of course their starkly different food scenarios in spite of the ingredients landscape being the same.
    From there we went to the vegetable section to learn about the favourite picks of the people of Bengal. It was great to know that Bengalis are fond of vegetables as well and the cuisine has some iconic dishes made with the local produce. Piyali showed us some of the usual fares like pumpkin, it's flower and plantain stem and blossom and some of the unusual yet coveted fares like maan kochu, different kinds of greens etc.
    After that insightful market visit it was time to head to her home the basic breakfast spread of luchi, sada aloor tarkari, begun bhaja and rosogolla. But before that Piyali's spouse Sunando took us to a nearby crowded eatery selling an interesting breakfast thing called Padani Porota. As the name suggested, it was a flatbread that had borne the brunt of ruthless palm beating. The resultant fluffy and flaky mass is savoured with yellow pea curry or some sweet stuff. It was tasty but not outstanding.
    On reaching their home we were joined by one of their close fried Avijit dada. All the walking had made us quite hungry. Piyali quickly whipped up the sada aloor tarkari using just three to four ingredients. Sunando fried the luchi and sson the table. The subtle and soulful meal was accompanied by an amusing conversation about some of the quintessential traits and idiosyncrasies of the Bengali people. We are so grateful for this endearing encounter full of food and cultural connotations.

    Proud to be a bengali as my ancestors are from east bengal migrated to kolkata before independence, basically foods from sylet districts , ita pargana are mouth-watering.

    Sunando Banerjee did a great job explaining the bengali culture. He is a new age entrepreneur who runs the Foodka food vlog youtube series with Mir and Foodka. He also owns the Hanglatherium restaurant. I love his unapologetic take on all aspects of Bengali culture and he knows how to sell it too.

    Bangals are not Bangladeshis and neither they're from Bangladesh, they're Indians from the Eastern part of partitioned Bengal, because Bangladesh was an Indian province known as East Bengal before partition so all those who shifted from Bangladesh before getting partitioned are Indians, and people who stayed back are Bangladeshis and not Indians.       Bengal was partitioned and some of its part got to india and the remaining was made a separate country called east Pakistan later Bangladesh.
      The people you are referring to are actually Bangladeshi people who migrated to India.

      @@peace163 people started migrating when creation of East Pakistan was in talks and people who migrated to India didn't except citizenship of East Pakistan they wanted to remain as Indians as they were before partition of Bengal. So they're not Bangladeshis yeah but now who are illegally migrating to India are Bangladeshis because they've stayed in Bangladesh and have become citizens of Bangladesh. Not the one who migrated before or at the time of partition.

    Piyali was a great host but no words to express my appreciation of Sunando da he was just amazing. Such nice people friendly and great hosts that’s our Bengal culture that’s how we are different from the rest . Anubhav ji as always the most gentle guest one can ever have a humble and down to the earth person.

    I had my childhood in kolkata... I am from kerala...i see a lot of similarities in culture of kerala and kolkata...from addas to chai to taash to culturally inclined socities..from fish to even the type of rice they eat . I wonder how.

      A lot of foreign influence. Education spread early, unlike today education then meant emancipation and culture. Coastal foods. A first gen graduate would call any social reform "woke", so they preserve the casteism, dowry etc.

    The lady has very distorted concepts about Bengali cuisine. Two things that stands out:
    1. While Bengalis love their fish very much it wasn't really a staple fish for all Bengalis. Rice & Fish is staple food of only the "Bangals"(people who came in from erstwhile East Pakistan) while "Ghotis"(people from West Bengal) of different region had different staple foodd. For example, for people of North 24 parganas it's "Biulir dal and postor jhal". Most importantly, Rice & Fish happened for Bangals not by choice but rather by lack of choice. Present day Bangladesh is a land of rivers and then there were endless cyclones(one is on it's way now as I write this comment) so for more than half of the year major parts of the land experienced floods, and in such scenario you could only get Rice & Fish.
    2. Quite contrary to what she said, general Bangal cuisine and cooking style is far more simpler than that of the Ghotis. There is a common concept that a Bangal can even cook grass such good that one would lick his or her fingers after eating eat. This again is due to the same reason of flooded lands and lack of ingredients and moreover, being compelled to live a rather frugal life with minimums as the annual floods brought about heavy loses every year, quite contrary to the Babu culture of the Ghoti area. Also, in British Bengal, the current Bangladesh area was almost totally agricultural area while the Kolkata side was the commercial hub and was hence much richer. We all know how the jute industry suffered due to this post-partition as the growers and the traders/markets fell on different sides of the border.

      Totally agree , my in laws are Bengali too and boy oh boy my father in law cooks brilliant food. Also he is the one who takes care of kitchen in household not mum in law and I het to enjoy every bit of it since I have no bro or sis in laws.

    Real bengali cooking is done in Bangal household...even the ghotis will tell that they know that Bangal food is best.Bangal food specialized in using mustard paste & kaala jeera...in our fish prepation we don't use onions as it dilutes the taste.. we use our special ingredients kalojeera & paanchforon....after lockdown ends come to a Bangal household to taste real authentic Bangal food like vat,sorshe ilish,aluposto,chanar dalna,dhoka,bangali style aludom,bok ful vaja,mutton kosha,chicken curry,chingri malaicurry,misti doi etc

    We had bengali tenants back in our house in shillong for many years. So i would pop down almost everyday and aunty would feed me the most delicious of dishes - food that, for a child used to local tribal cuisine, was a whole new world of taste and variety but had just enough similarities with the food i was used to that it didnt make it entirely alien. Thus began my love for bengali food, bengalis and later on, Kolkata, a city i make a point to visit every year. And how can one forget the implied intelligence of the bengali english accent, much like how we associate intellectual prowess with a proper british accent. 😄

    Having stayed for quite a while in Bengal, this video still showed so many aspects that I wasn't aware of. Some more things you should definitely try eating/experiencing in Bengal:
    1. Luchi with aalu dum/mutton/chicken
    2. Radha bhallavi
    3. Puffed rice with Aalu chop Or baigan chop
    4. Fish Paturi (mustard fish wrapped in Banana leaf)
    5. Durga and Saraswati pooja
    There are so much more when you travel up North!

    The "PADANI Paratha" is still prepared in Trinidad Tobago Indian immigrants. They also eat with dal. I came to know from an Indian immigrant friend in USA they never been to India. But they know their ancestors are from Bengal and Uttar Pradesh.
