We love our freeze dried egg and often use them when camping or on other trips where we are traveling...when we are packaging them we just crunch them up with our hands and they package well that way and reconstitute easily.
You are right! The cooked eggs are quite good while still dry. We freeze dried cooked egg discs for putting on thin buns with ham for sandwich, and they rehydrated well. ua-cam.com/video/tP32c8XjcaQ/v-deo.html
These raw eggs are not as convenient, but I think I might like them better. Well, I have four more 4+ year old bags for testing. Almost all the other 8 dozen eggs did go camping.

We've been freeze drying for more than 4 1/2 years and we still have a big list of "to do soon." The list never seems to get shorter. I hope you enjoy your freeze dried foods as much as we have ours.
Thanks , I too have done (freeze dried ) eggs occationally for the last 3 years , but have only reconstituted once, and they were good, but I precooked them (scrambled). I have since freeze dried fresh eggs , but never reconstituted them. Glad they are good also. (Possibly better than cooked). Keep up the good work.

Did they need a bit longer to rehydrate before cooking?
This rehydrating was pretty much in real time. That's why I was thinking of doing some of the faster rehydrating foods as live streams.
