This is a great example of why I always soak my beans and parboil before canning. Seeing many posts about canning dry beans, and my brain goes -Whaaaa!
I can't imagine canning beans dry either. I find it's no skin off my nose to soak them and heat them up before canning. It just takes a little planning and, personally, I've found that trying to can anything on a whim never turns out well. Lol
Oh man! I canned those buggers last year for my husband cause he loves him. Never again. Those things sucked up every bit of water in the jar and bonded together like cement I had to dig them out of the jars. You're a better man than me, Leisa.

I'm excited about the video for lima beans, I love them. I'm sorry about the shingles. Two ago my mother-in-law refused to get the shingles shot her doctor told her to because it was inconvenient, and she got shingles six months later. It was bad. She finally got over the shingles enough that her doctor told her to get the shingles shot now and she was at the office the next day for it. She said shingles was the worst thing she ever had in her life. I hope you get good relief from your medication.
My family is mixed on butter beans. I made butter beans tonight with our leftover ham bone. Totally enjoying them. When I was a kid lima beans meant the little green bean, same shape. I did not like them at all. Butter beans were a yellowish-tan bean. My brother liked them served over bread, I liked them plain. I had mine over bread tonight. Delish!!

Here in Southern Minnesota it was 73 yesterday which sounds butiful. But ut it was poring off and on with 50 mile an hour winds. Terrible weathe. So looked forward to 9ur first really warm day.. now this week it going to be cold again.. loved your video. My favorite kind of bean is lima beams. It is al out impossible to find them in the store. I did find some at Walmart last week and so I will be canning them soon.
Butter beans is one of my favorites. I order them from Walmart and delivered . I keep an old gallon pickle jar full of Limas in my working pantry. We eat them more often than great northern.
I think you hit the Jackpot on large lima bean canning. Im going to be canning my large dried limas. I will do them with the fast soak like you showed here. Because, this seems so much better than an overnight soak. Limas just get mushy so easy and Phil says these are not mushy and they do look great. I do think a fast soak is the way to go. Love them too. They are a different variety of lima beans that never get very large. Prefer them fresh off the vine, although I don't like to shell them. Shell them, cook with a rasher of fatback. Give me some fried cornbread (pone, hoke cake, whatever its called in your area) and I'm eating like a king!

Just made homemade butter bean and ham soup last week using my canned butter beans. Mine looked too dry but upon making my soup and adding stock, they turned out great.

Grandpa used baby limas for his ham and bean soup. I love lima beans even large limas. Grandpa served his bean soup over bread with a ton of black pepper.

Love lima beans . My aunt use to make a sweet cream sauce to go over them. I never got her recipe- sad about that. But yes I really like them plain with butter.
I’m late to the party! SO glad to c u do these beans. I love them. Momma cooked them all the time with ham and we ate them over crumbled cornbread. Daddy, who was Italian, showed me his twist to the dish by adding olive oil and vinegar over the top! Gives them a total different flavor and I love them that way! Ty! Hope u feel better!

Jar alert! On 4/24/22 Menards in Cincinnati, Ohio had Ball jars in squat 8 oz., pint and quart, each in regular and wide mouth. Also had Anchor Hocking jelly jars, pints and quarts only in regular mouth. Anchor Hocking jars were cheaper. Large quantities and separate display for Anchor Hocking jars. They also had Ball lids, both kinds, Pur Mason lids, both kinds and an off-brand that I don't remember. I am very impressed with the Forjars lids. The prices at Menards were cheaper than Walmart.

I like lima beans (or butter beans ) with corn, about 1/2 and 1/2. Yes, I know that is one type of "succotash" but it is my favorite combo. NCHFP only has procedures for succotash using fresh corn & fresh lima beans; I start with dry beans and frozen corn so I use instructions for longest ingredient (the beans) and sort of blend with instructions for corn. IE, soak then pre-cook limas as you did, mixing in corn for the final 5 minutes before jarring up, add just a pinch of salt & cajun seasoning then PC pints 75 min.

I prefer baby butterbeans served over cornbread. My favorite comfort food😋 I found some ham-flavored (Goya brand) powdered bouillon. I think that would be good added to each jar.

Is there salt in those beans? Shingles are the pits! I got them about 10 years ago because the clinic was out of vaccine. The doctor said check back in a month, and then get the vaccine. During that month, shingles came calling! Praying you get rid of the pain quickly!

I found the book. Revised Home Canning. I see why I was confused here. It does say to cook the beans for 30 minutes after the overnight soak. I think the confusion here was it also describes a fast boil of 2 minutes and then soak (rather than the overnight soak)...and then the boiling for 30 minutes start. Maybe you skipped the 30 minute boil and went into a fast soak method after the overnight soak? Anyway, I like your beans texture better and will give it a go into hot jars with hot water.
Hi Leisa. Unrelated question for you, well, kinda related as they’re beans! Coffee storage question for you. I know freeze dried coffee stores long term. I know ground coffee doesn’t store. But what about whole coffee beans? How long do they stay good for? Asking because I’m packing to move and I just pulled an unopened 3lb bag of coffee beans out from way back in the pantry and they’re old. Best before 2013 😂😂😂 That means they moved here with me! 😂😂 Toss or keep? So sorry to hear you’ve had shingles. It’s nasty! Glad the meds are helping. Hope you recover fully soon.
I recently canned black beans for the first time. Like you mentioned they absorbed all the water and look dry in the jar. I assume they are still ok to eat....? The seals are solid.
Love the Forjars lids! I canned some bacon ends and pieces and all lids I used were Forjars except for one which was Ball. The only one that didn't seal was the Ball! I reprocessed with a Forjars lid and it sealed perfectly

I do not like dry lima beans, especially the large ones like you canned. Love tiny green butterbeans. Yes, there is a difference. Learned the lesson of overfilling jars when canning dry beans, too. Gotta leave extra space for water that the beans will absorb during and after canning. On another note, I have a 16 qt and a 23 qt Presto. If I don't know that the yield will fit into the 16 qt, I prep the 23 qt. With the way energy prices are going up I'd rather use the larger canner when it isn't needed than to have to do 2 processing runs. Thank you for following safe canning guidelines. Can't believe how much risk taking some channels promote to those new to canning. It's their kitchen, their choice. Yes, I firmly believe that. Yet, it's sad that those new to canning don't know they are doing the equivalent of driving without a seatbelt. Would novices actually take the risks if they understood them? Sad, too, that some people don't understand that a scientist in one field is not automatically qualified as an expert in another scientific field of endeavor. Hope you recover quickly from shingles. I had them years ago. Was out of work for 2 weeks. Hope I never go through that again and that you don't either!

There are large Lima and baby Lima beans. The large Lima beans are called butter beans when they are cooked while still green. That is the only difference between a large Lima and a butter bean, the large Lima is dried and the butter is prepared without allowing it to dry.
i love all the dry white beans love them with bacon , or ham or boneless neckbones in them to flavor them, but i wont touch a black eye pea or chick peas or green lima or lintils of any kind

Sorry overnight soak and then I will not boil them for 30min. I will boil 2min and soak (fast soak) and then prepare.
When I had shingles I used witch hazel on it. Gave great relief and dried the buggers up!!

i got my shingle shot about 10 years ago and when they come out with the new 2 part shingle shots my doctor had me get those also.

So sorry that you have shingles, hope you will be doing much better soon.... Love lima beans. Those white 'lima beans'are what I call butter beans. Lima beans are green. I can only find dried baby limes. Would love to have dried Fordhook Lima's but don't know where to find them.

I do not like dry lima beans, especially the large ones like you canned. Love tiny green butterbeans. Yes, there is a difference. Learned the lesson of overfilling jars when canning dry beans, too. Gotta leave extra space for water that the beans will absorb during and after canning. On another note, I have a 16 qt and a 23 qt Presto. If I don't know that the yield will fit into the 16 qt, I prep the 23 qt. With the way energy prices are going up I'd rather use the larger canner when it isn't needed than to have to do 2 processing runs.
Thank you for following safe canning guidelines. Can't believe how much risk taking some channels promote to those new to canning. It's their kitchen, their choice. Yes, I firmly believe that. Yet, it's sad that those new to canning don't know they are doing the equivalent of driving without a seatbelt. Would novices actually take the risks if they understood them? Sad, too, that some people don't understand that a scientist in one field is not automatically qualified as an expert in another scientific field of endeavor.
Hope you recover quickly from shingles. I had them years ago. Was out of work for 2 weeks. Hope I never go through that again and that you don't either!

There are large Lima and baby Lima beans. The large Lima beans are called butter beans when they are cooked while still green. That is the only difference between a large Lima and a butter bean, the large Lima is dried and the butter is prepared without allowing it to dry.
i love all the dry white beans love them with bacon , or ham or boneless neckbones in them to flavor them, but i wont touch a black eye pea or chick peas or green lima or lintils of any kind
