My great aunts and great grandmother always said the best lard that keeps the longest is lard that you cook low and slow until all the water has evaporated and you have to pass rendered lard through several layers of muslin.
The muslin wasn't thrown away, it was cut into strips used for starting fires

People are always saying how large is no good for you for years now but they're not talking about fresh lord they're talking about lard from the stores large stuff in the stores are no good for you large from farm fresh animals you self-reased or bought from a local farm read about it and yes it is very good for you and yes it does taste very good getting to be a little bit pricey now but still well worth it

we haven't however we've used maple wood to smoke it

Do you render your beef fat for tallow for cooking also? we are picking up our beef on Monday and will render the tallow for cooking. Probably use our big cast iron lard kettle over an open fire outside. It holds 15 gallon, same kettle my great grandfather used. Tallow has a high smoke point and neutral flavor much like lard. Mine goes into jars to seal and store in the cellar as well.

Do you have a link for the fencing that you use? I need a temporary fencing for my chickens until I can get a permanent fence.
It’s called premier 1 fencing, it’s electric netting that we hook onto our fence and it works great keeping the predators out
Why do they not fly over? Did you clip their wings?
No, we don’t clip wings, we’ve moved chickens like this for around 3 years. As harsh as this will sound, the ones that fly out and can’t get back in don’t stay around, predators ect. Over time using this method we have a good group and we will just have 1 fly out occasionally but they know how to get back in ☺️
How do you keep those chickens from simply flying out? Are you trimming all those wings?
no on occasion one will fly out but as long as they have food and water we don't have much problem
