I think the design change somewhat represents the separation between the Demon and the Character. In the first game, Bendy and the Demon were one. In the second, Wilson surprised the Demon, and when Audrey released him, she separated the Demon from Bendy.
it IS unused because it's not in the FINAL game that's typically what scrapped content is regardless if it's been used in an older version before final release

Tbh, I prefer when Ink Bendy was like this in the first game than Batdr, and don’t get me wrong, he’s also great in the second game, but I just like this more because back when he wasn’t able to speak but made growling noise that almost sounded like he was saying “Henry” added more scare-factor to him, especially his ambience that plays when he’s walking around with ink around him. His design in Batim I feel like fits the half cartoon/half monster aesthetic better while still looking like Bendy. I also prefer when he used to just walk around and actually chase you around the studio when he sees you instead of in Batdr where it gives you a warning saying “the ink demon is coming” and when the time runs out he instantly appears in front of you and kills you in an instant, but in Batim he used to just walk around and not go away until he goes through an ink portal, which that I feel made him more creepy, just watching him walk with a limp and a constant twitching smile and without the ability to talk just makes him much scarier for me👍

13:46 was the chase theme up until chapter four, then it changed to the remastered one, it wasn’t unused. Hope this helps 😊
The chase themes are my favorites honestly, they just have this really good beat, otherwise the breathing is soothing and calming
