      When fats become a unstaple, this is where eating your fruits and vegetables comes in and when I mean fruits and vegetables I don’t mean drink juice. It’s even better if you have your fruits and vegetables in a garden because they have the highest amount of nutrients that you need. This will help you with dealing with free radicals when the fat breakdown.

      Someone asked you one time which fat to use for deep frying. You said it doesn't exist (which seems correct) but I was thinking... could a high pressure cooker be used? At 3000 psi water boils at 700 C (I'm joking of course but things do change at pressure, could any pressure be workable?)

      The Sesame Street issue. Part of education is learning how to learn beyond blips but over time to absorb more information. To learn to mastery, it takes time. He does a great job, but there is a lot beyond it, he probably prepped for a full week to make the 10 min video.

    Dr. Sten I've been searching for about 2 weeks for a good explanation of saturated fatty acids and unsaturated fatty acids. They were either dumbed down to much or incomplete due to a bias for either one. I am grateful for your complete and balanced explanation.     i stick to my butter, olive oil, and the fat that is on the meat because i think that they are good for you. awful advice from the governments telling us to eat margarine and veg oils

    Dr. Ekberg, thank you so much for giving the education we really need. I just listened to a talk on overeating, the speaker mentioned that olive oil promotes breast cancer. I was shocked and stunned by this piece of information. How could that be? Is olive oil really that bad?

    One very important point was, that body uses saturated fats for fuel, which if used may lead to some sort of weight loss. Second point was, when polyunsaturated fats are exposed to oxygen or heat, they become "toxins". Would gladly hear more on this point, does this apply only to polyunsaturated fats, at what point or temperature does this process start, how to get around it besides not exposing it to heat? And in the end, what should be used when frying a slice of meat or vegetables, it you don't want to get intoxicated?

    Thank you for the knowledge you share. My favorite videos are the ones where you actually give a list of foods to buy, like a grocery list. I was looking for one on cheeses and your saturated vs unsaturated fat video shows you holding cheese but doesn’t really give a list. Could you do a cheese list video?

      That is awesome. When people cut out sugar and processed foods they wonder why they didn't do it earlier. If you change your diet things will taste better, you feel better, and you let your body heal more.

      Yes, that's the way my dad ate too. He ate eggs and bacon for breakfast every day and some kind of meat with every dinner. Ate real butter and put heavy whipping cream in his coffee. He was always more healthy than me (trying to eat more plant-based and low fat), and he lived until he was 95 years old (still playing golf weekly into his early 90s too).

    Dr Sten, i also have learned about hydrocarbons in college .and i could relate to your explanation really..the single -bonded HCs(saturated) refer to alkanes, those with double bonds ( unsaturated) are called alkenes, and the ones with triple-bonds are called alkynes...it is so ironic since supposedly, the triple bonded should be the strongest and more stable...but the byproducts of petroleum oil , like lpg ,gasoline, acetylene, have all triple bonds ...and they are so volatile..so they are not really stable..so thanks much dr.Ekberg for the refresher / additional info.. at least we will not be in doubt anymore what oily foods are beneficial to the body...👍

    Hello Dr Ekberg. Great video well explained as usual. I have watched a lot of your videos and think they are all great. I just want to rectify a small mistake: you called the fatty acid with 16 carbon atoms stearic acid, that's not correct. Stearic acid has 18 carbon atoms and palmitic acid has 16 carbon atoms.

    Many thanks. Great food for thought. As a retired chemical engineer (hydrocarbons) I enjoyed you explanations of isomers. I have no biology background so coming to conclusions about what works in the body is a huge leap for me. I assume short chained fats might be metabolised too quickly, causing insulin spikes (maybe Caproic acid C6H12O2 in MCT oil). Longer chained fats with double bonds near the Middle might be ideal (For example alpha-Linolenic acid C18H30O2 in flaxseed oil). So possibly the later is better for OAPs like myself with veins hardening from straight chain saturated fats. Just trying to understand the complexities of body chemistry thanks.

      Thank you chris howard. Monounsaturated (olive oil) are closer to saturated. That's why they are both good.

    Now I have a doubt. I use only avocado oil for cooking which is non saturated fat. Now, I buy big, half gallon plastic bottle which lasts for about few months, sitting in dark and room temperature place, tightly capped. Is it still safe and healthy for using after all that time? Should I maybe keep it in a fridge? Thanks

    Olive oil isn’t “also called oleic acid”. This is deceiving. There is oleic acid in olive oil, but they are not the same thing. Oleic acid is also found in chicken, nuts, and many other foods.

    I break my fast with four half-fried eggs in ghee. Waiting for my next lipid profile. I have lost 30 lbs in 4 months so for after starting low carb and high saturated diet. Thanks to Dr Sten.

    If you consume too many saturated fats, does that mean the membranes of your neurons become stiff? If so, what is the turnover rate for fatty acids in your cell membranes? Do they eventually get swapped out if you eat more unsaturated fats?

    Rancidity is why I use high quality LIQUID Codliver oil. Freshness of capsule fish oil is questionable, "Old" liquid fish oil tastes off and can be refused. My go to is of course King Oscar Sardines in Olive Oil.

    SFAs have been broadly related with cell apoptosis and this has been associated with several metabolic diseases including T2D. Specifically a decrease in β-cell mass caused by an increase in apoptosis has been linked to palmitic acid. Please Explain

      There are many different kinds of SFAs. They act differently in the body according to the chain length. You can't lump them all together simply because they contain no double bond.

    Do you have any videos or have plans to talk about how to deal With not having a gallbladder? I took mine out in April and can eat normal food but I do get some bloating and pain in the side after big meals and this last week i feel it's been a little worse. It can be stress too that causes my discomfort but not shure.

      I might do one at some point, but have no immediate plans. In the meantime, get some bile salts to supplement when ever you eat a large amount of fat. Okay... I think I will do at least a basic one shortly.

      Dr. Sten Ekberg I tried looking for something at the pharmacy but that had no clue. Going to my doctor on Monday. I have a suspicion I have some stones in the bile duct. I don't eat too much fatty food but I could do better. Looking forward to your take on it in a video. Thanks

    i'm eating gouda with asian lectuce right now haha
    actually it tastes better than with bread coz it's more crunchy and refreshing.
    and gouda.i mean you can't go wrong.

    This was exceptionally clear and accessible lecture. I wasn't aware that the length of molecules affect their melting point. What is the composition of Lard, which is even softer than butter? Lard is very practical for that reason. Beef fat is a pain to wash and it clogs up drain pipes. Is there any truth to it also creating blockages in the digestive system?
