You are right but l realised when you mix a bit of the cassava dough to it the cooking doesn't take as long ... l once tried one without and it cooked for 3hrs 30mins and they were only six balls , my sister recommended l add a bit of cassava dough and it took under 2hrs the difference to me was maybe the texture the latter was softer
U don't have to use cassava dough I tried without it and wasn't really soft. It got very hard the next day but whenever I added the cassava, my Kenkey feels soft and smooth even after I leave it in the freezer.
sunshine city eves dont make kenkey, corn dough with cassava dough is banku or akple so no need wrapping. Ga(s) dont cassava dough to kenkey. The softness comes from the aflata n ensure it is cooked before adding the raw corn dough

You can buy the corn meal at any supermarket, add water to form a dough. Add the water little by little till a dough is formed. Let it sit in a cool dry place, not the fridge. Let it sit for 3 to 4 days and your Kenkey dough is ready. But when it gets fermented, scrape the mould off the top
