      Why did you use the pink salt when you partially cooked them? Did you need to use pink salt?

    I made 24 lbs of this with the exception of the tumeric (didn't have any) added some dry mustard instead. I cut back on the cayenne and added some chili powder. The flavor was as perfect as I have ever eaten. Thank you Joe for sharing. This made me confident enough to make this happen.

    That Looks AMAZING!!! Thanks for the shout out!! I made mine about 3 weeks ago for Celebrate Sausage Season 2 and you are correct they are ridiculously good. The cream cheese adds a very nice mouthfeel to the sausage!!! One of my top favorites as well. I love the Texas Taco😁!!!!

    Great idea of “pinch and twirl” every other link. Much easier and faster doing it your way compared to my way of twirling one link clockwise, then the next link counterclockwise.Thanks for making this video and sharing!

    Great job, looks amazing. When I first saw the pieces of cream cheese I thought they were to big, you would get no cheese in one bite and all cheese in the next. Looking at the finished product it looks perfect, a bit of cheese in every bite. You completely nailed this one very well done. Please go into business so I can buy these great products you crank out!!!!

    Just made 13 # of this sausage. (I probably could have scaled the recipe back a bit). It is definitely the best sausage I have ever eaten. What I especially like about your channel is your low key teaching style. Not too slow for experienced sausage makers but just right. I have learned a lot. Thanks again.     I never thought of putting cream cheese in sausage before, looks good!
    Another way of getting most of the sausage out of the grinder is to use a couple pieces of old bread when you are done grinding the meat. That's what my Mama taught me.

    love the recipe.. i do a COLD smoke (yes i have a Cold smoke generator system I made) for 3 hours. than vac seal and freeze. when i thought out than grilled cooked they taste as if they were smoked for days!! Love this recipe. that will be my next 35-40lbs recipe. thumbs up and I subbed. thank you

Do you perhaps have a video on this or could you point me in the direction of some good literature to help me determine weight ratios when it comes to creating a recipe.     Damn! That looks delicious. I would remove the seeds and membranes due to stomach issues but it might be worth it.

    I made this today- home run!! Love the pinch and twist tip. Also, using the weed burner to roast the jalapeños was a huge time saver AND roasted EVENLY! If this was YOUR 2nd or 3rd favorite sausage what are your first 1 or 2?!? I need to make them too!!

    Would putting the meat mix in the freezer help equalize the meat and the cheese temps? Also, how about mixing in small batches (like 1/4th of each) lessen the cheese from breaking up? This is one recipe that I will have to try.
