    The hot sauce is made with an original blend of Premium Kanzuri chili paste aged 6 years for a deeper umami, locally grown Carolina Reaper Peppers for that extra fire and shoyu (Japanese soy sauce). The hot sauce crafting process is performed by local artisans so they can only craft about 1200 bottles at a time but this guarantees the utmost attention to detail and an unrivaled taste experience. The hot sauce will be released in limited batches, so get it while it's still available.
    A day in the Life of Japanese Hot Sauce Maker in Myoko Niigata Japan. This is the working hours at a local Japanese hot sauce producer outside of Tokyo which shows the Japanese office culture for the area. He works at Kanzuri, a family-owned small batch producer of a one-of-a-kind fermented chili paste, also named Kanzuri, it’s original form dating back more than 400 years as the Niigata people carried it into battle as a way to supplement their nutrition and warm their bodies. Still undiscovered by much of the world, this spicy umami-rich ingredient is widely-known among culinary experts and chefs throughout Japan. And…Kentaro has been working tirelessly for this company for the last 9 years in sales, along with 18 other artisan and staff to make it all happen. And today is special, because I also get to introduce to all of you my first ever Japanese hot sauce made only in Japan at Kanzuri's Niigata small family owned factory.

    My bottle came in today! This is by far the best artisan hot sauce I've tasted. Even though it uses Carolina Reaper, I'm blown away by how much flavor is packed in just a couple drops.

    This series, A Day In The Life, is one of the best content in YT. Unique + interesting, consistent in quality. I dont want this to ever stop- only worry is that at one point, Paolo would have already covered all types of jobs and Japan and this may end. 😂😭

    The image of the red peppers on the snow is the most beautiful haunting picture in the whole Paolo from Tokyo series. This is a unique episode in the One day in the Life section due to the exotic snowy setting and because it shows the collaboration between Paolo and a hot sauce maker in North Japan. I expect to find the hot sauce when I visit Japan next year.

    Hi Paolo! My Japanese wife and I are big fans of you (eagerly awaiting every new video) - and I am a big fan of hot sauce.     I've bought one, and it's actually my favorite hot sauce right now. Blends extremely well into barbecue sauce, adds an extra zip to ketchup, goes deliciously straight onto eggs. Haven't tried it on a steak yet. I've also managed to find a bottle of kanzuri, and can't wait to try it.

      @@intpleb4206 Pretty good! It's a flavorful, lightly spicy (compared to Kaminari, or even a standard red hot sauce) paste that goes well in soups/sauces/stews that you want to add zip to. I wouldn't add it to cooked eggs, but I would add it to a pre-cooked steak. It has the consistency of miso or "better than buillion", if you're familiar with that. I got it from "Umami Insider", though they're sold out of it at the moment.

I have always been fascinated with Japan and Japanese culture but after I started watching your videos and, other channels as well, my love of the country has grown even more! I haven't even been there yet! I have even started taking Japanese lessons!     I got some of this a couple of months ago and I'm still working through the one bottle I bought. I must say that out of many hot sauces I have tried in various styles and spice levels, this stuff is the absolute best balance of flavor and spiciness I have ever experienced. I wish it were easier to get Kanzuri's other products in the US, but this collaboration has gotten me hooked! Well done!

    I love seeing this type of stuff, so interesting to see how people in Japan live their daily lives. So many similarities to America and also some differences. It’s so cool! And that Hot Sauce looks delicious. 😋
    I also never knew Japan was the snowiest country in the world, they get more snowfall than Russia, Canada, mainland America, and even Alaska. Japan is amazing :)

    My hot sauce arrived this week. It’s heaven and hell. The umami is off the charts when eating my my favorite foods, a perfect blend of zest and heat, etc. I don’t really feel the Carolina reaper when eating, but hours later I’m reminded of my indulgence. I look forward to more collabs, this one was really special.

    Kanzuri is my favorite hot sauce, it’s rather hard to find here in Japan but oh man that umami is unbeatable with the salty chili flavor!
    Goes with anything really, people use it for Yakitori, salad, fried rice, ramen, you name it…better try it if you haven’t!

    I bought 2 bottles of his hot sauce, to support him and a craft maker in Japan. I just tried it by itself and it's really good. Citrus notes initially, with a nice build up of heat. If you watch "Hot Ones", it would be in the 2-4 spot, probably. I'm not a super heat seeker, my favorite sauce is Queen's Majesty Scotch Bonnet & Ginger. I'd say it's similar heat to that. Manageable heat, good flavor, I think it's ideal for a splash of flavor on a breakfast sandwich in the US. It would be really good with eggs and sausage, with some bread for heat noobs.

      Queen's Majesty Scotch Bonnet & Ginger is my favorite hot sauce. I love that Hot Ones introduced me to it. I've also ordered 2 bottles of Paolo's hot sauce and I'd say that Paolo's sauce is noticeably hotter. Queen's Majesty has broad flavor, while Paolo's sauce is deeper in flavor. Paolo's sauce is just satisfying in complexity, while Queen's Majesty gives a broad range of flavors.

    Heck ya. I have made my own hot sause as well. Hawaiian style with habenero, pineapple, mango, onion, garlic, and carrot to push more of an orange color.
    Just bought your hot sause and I can't wait to try it out.

      Welp, thanks to Paolo I'd imagine production would ramp up quite a bit.
      The folks over at Kanzuri might even have to build a much bigger place just to keep up with demand. Ditto with the farmers, with them planting more yuzu and chilies to harvest.

    Paolo adventures are always exciting, I love how each adventure with someone is always from their point of view. It's focused around their day to day life, vs. it being planned out and scripted. Just an awesome person being themselves. Very real.

    What an awesome video! I'm so glad you could not only visit them, but also collaborate on your own product. As a lover of hot sauces, I'm a bit let down by the fact that I can't afford a bottle or two at the moment, but I have no doubt that this will be successful and will be around in another production batch!
