    --I make around 1-2 gallons of yogurt a week, 1 or 2 gallons at a time. I have found no difference in consistency when using 2% vs whole milk (4%) when I use cheap, pasturized, non-organic, supermarket milk.
    --I do not recommend relying on the light in the oven for a heat source. Home ovens are highly insulated so if the light put out enough heat for a cold day it would ruin the yogurt on a warm day. When I make 2 gallons there is enough heat mass in the oven to stay warm for the duration, but if I make 1 gal on a cold day I will simply fill the emptied milk container with hot tap water and put that in the oven with the incubating yogurt. My hot tap water is 120F.
    --There are two strategies to denature the milk proteins for thicker yogurt. The first is to take the milk to near boiling for a minute or two. The second is to take the milk to 180F for 20 minutes. I prefer the latter for three reasons. First, because it is much easier to scorch milk on the bottom of the pot at the higher temperature. Second, less time standing and stirring. Third, if you put the hot pot in the oven for that 20-30 minutes after it reaches 180 F it will warm the oven for incubation.
    --After 20-30 minutes minimum in the oven I put the pot in a sink full of cold water and stir. Covering the pot will prevent surface film from forming. Mix your yogurt starter in some of the cooled milk to get rid of lumps, then stir into the pot of cooled milk (100F-115F). I then ladle the inoculated milk through a wire strainer to take out the bits of solid milk scraped up from the bottom of the pot. The milk goes into old plastic yogurt or cottage cheese containers (24 oz) (that fit under the wire strainer) with lids. They don't have to be super sterile, just normal dish clean. These go into the oven for at least five hours. 5-7 hours gives a mild dairy flavored yogurt, longer/overnight gives a tart "plain yogurt" flavored yogurt.
    --If you keep using yogurt from the previous batch to incubate the new batch the flavor will change and it will get more tart after several batches, so I always freeze some starter from the first batch to "start over" when the flavor changes too much.
    --The starter is important for thick-jelled yogurt. I have had very good luck using both Chobani and Oikos Greek yogurt, others have resulted in thinner product. A small 5 oz container will inoculate two gallons of milk. A heaping tablespoon per quart/liter of milk works well.
    --I do recommend getting a food thermometer (it's just easier). Mine is a little spiky thing for testing microwave foods. Test it in both boiling water (212F) and ice water (32F) to see how "off" it is.
    --If your yogurt fails to thicken you either killed the culture by adding it to hot milk (over 120F), didn't get your milk to 180F to denature the proteins, or your incubation was too cool and too short. If your yogurt curdles your incubation was too hot (115-120F instead of 100-110F).

      Now i know why mine didn't thicken. Anyway, i am using my old easyo jar to incubate my homemade yogurt since i don't have an oven and i put freshly boiled water then put the yogurt jar inside... Do you have any suggestions in incubating yogurt? Thanks!

      @@arianne5842 A normal cooler should work. Anything insulated. I saw a video where a woman just covered her jars with several towels but I would want some insulation on the bottom if not a hot day. Surrounding with containers of hot water would help keep the temperature stable longer.

    Great Recipe. Thank you! You can add any Chili pepper stems (preferably not dried). Just rinse them, put in the warmed milk and let it cool. I usually add fresh fruits and if I need a sweetener, I prefer using a good Honey.

    If you don't have previously made curd. You can use a whole green chilli with the stem. Just place it in the milk instead of the curd. Rest of the process is same.

    thanks for video, we don't have a "Yoghurt maker" so we will try our Dutch oven.. we like our yoghurt very thick but runny.. looking at your final product, that's the kind of yoghurt we don't like.. like solid lump in spoon.. how long minimum in oven to be able to get the nice creamy runnier yoghurt?

    Thank you, I have been wanting to make yogurt at home since the cost here is about 4x the cost of the same amount of Milk..... I do not have an oven (In Thailand)... Is it ok to just leave overnight on the shelf (about 27 degree C at night here), or should I wrap the pot in a blanket to keep some heat in?... or maybe make in the morning and leave throughout the day on the shelf (is about 35 degree C in the daytime)... I would love to hear your feedback before I try

      You live in a warm place. Leaving mixture overnight in a warm room will be fine. I live in Cali and leave it in the Kitchen and it’s done by morning. Hope this helps.

      Instead of putting it in the oven, you can wrap it in a down blanket which will hold the heat for 12 hrs. if your room is not cold.

      Good morning. 🤣😎. I'm very elated this morning. My yoghurt came out very well this time. I think what happened to the first batch was that it did not boil long enough.
      I intend adding honey to sweeten a bit. My question now is this: After adding and stirring in the honey will the yogurt thicken again after refrigerating?
