  • Beet cured salmon is a variation on gravlax where the traditional salt, sugar and dill cure has added beet to give a beautiful pink-purple tinge to the outside of the fish as it cures. It's easy to make, and makes an elegant and pretty addition to a Scandinavian spread, or use it as you would smoked salmon eg on bagels, in salads and more.
