    Excellent fillet job. I love the attention to detail and how you left no meat on the skeleton.

      Thanks for your comments. I am still working on my speed. Now it takes me about 5 minutes per fish, and that's a long time when I have to filet 10 of them :-(

      Fish and RIB I’d much rather see a beautiful final product than a sloppy rushed fillet job. Good job. Keep it up.

    What are the advantages of using a deba knife? I know that a lot of people will use fillet knives because they are flexible

      Deba knives are much sharper, especially the high carbon ones (not stainless). Their disadvantage is they rust and you need to spend a lot of time sharpening them. That can be a chore if you just filet once a week like me.
