- Three layers - one slice. For such a simple dish to make this tastes deliciously indulgent. Fruity jam sandwiched between a spongey shortbread base and a creamy coconut topping. Soft, gooey, chewy and crunchy.

"All about the base... no treble" I loved that part!!! Oh boy, I love coconut sooo much that I would eat it anyway it comes. Lovely dessert.

Oh my goodness, we had this straight from the oven with vanilla custard, after dinner. Massive taste sensation, there was ample for 4 of us, but it tasted SO good we all said we could eat this dish again, even though we were all full. Next time we may try it with vanilla ice cream, or fresh cream...anyone reading this, please give it a try, it's the most moreish, delicious, desert I've ever tasted.

Cat Foxx Hi Cat, just catching up on comments - sorry for the delay ! These tasted so good, luckily Minion took them to work, otherwise I would have eaten far to many !!!! However, they weren't quite as tasty as a huge bottle of Prosecco :-) Sx

I afraid I would have to split the two tins into the two portions, we love anything coconut, and those coconut slices look like our idea of heaven, warm with custard, oh my I'm drooling.
