  • Any Australian may remember your aunt, mum or granny making this easy raspberry coconut splice for a family gathering. Raspberry and coconut slice is a much loved classic Australian slice recipe, which is not only easy to make, it tastes good. This spelt slice includes a crisp coconut topping, juicy raspberry jam centre and crunchy spelt flour base.
    Not into spelt flour, feel free to swap out for the flour of your choice, or even the jam you love.
    I love making this Sue Maree P spelt a recipe for friends and family gatherings.
    Spelt flour is a good source of fibre. The texture is light and airy like wheat flour and can be substituted in baking cakes, cookies, pancakes and bread for a healthier alternative to wheat flour.

    💃 INGREDIENTS
    ___________________________
    200g / 7.1 oz spelt flour (could swap out for plain flour or gluten-free flour)
    150g / 5.3 oz caster sugar (1/2 for the base, 1/2 for topping)
    125g / 4.4 oz / 1 stick unsalted butter, chilled, cubed
    3 eggs (1 egg base, 2 eggs for the topping)
    1 teaspoon vanilla essence
    250g / 8.8 oz raspberry jam (I love Bonne Maman)
    200g / 7.1 oz desiccated coconut
    METHOD
    Preheat oven to 360˚F and grease and line a 3cm deep, square tin.
    Mix flour, 1/2 cup sugar and butter to resemble breadcrumbs.
    Add 1 egg and vanilla. Mix to form a dough.
    Press dough into the base of the prepared pan.
    Bake until golden for 15 to 20 minutes.
    Spread jam over warm base.
    Whisk remaining eggs and remaining 1/2 cup sugar together. Stir in coconut. Spread over jam.
    Bake for 25 minutes, or until golden.
    Cool completely in pan. Cut into pieces.

    This is a family favourite but I usually make tartlets.Can you tell me what size the tin was please?
