I haven’t seen a Tri tip cooked to a high temp like brisket or chuck roast, I usually see them cooked to medium rare or medium. I’ll have to give it a try. Those mushrooms looked amazing. Also I love your Costco. Never see Tri tips at mine in the states.
I've been watching your presentations for a little while now and they are inspiring...it's about an hours drive to the nearest Costco but now when we go my wife and I have a game plan regarding meat purchases...keep up the good work!

Cook the tri tip like a steak. High heat. Seared on the outside. Red in the middle.
