Scott…. This is the best so far and I’ve made loads of your recipes! I added the chilli and like someone mentioned previously, I had it with Corn Chips, sour cream and guacamole!! Absolute game changer this! Will now be a staple. Cheers buddy 👍🏻

Looks tasty - is the recipe available in written form anywhere? If I want to cook it for more people, I just want to know how much to increase each ingredient by.
Sure 🛒 Ingredients
1 tbsp. coconut oil
10 g garlic, minced
1 red pepper, chopped
1 red onion, sliced
500 g lean steak mince
300 g rice, uncooked
400 g chopped tomatoes
550 ml beef stock
2 tbsp. Mexican seasoning
60 g low fat cheddar
Handful of fresh coriander

I simmered for 20 minutes and the rice didn’t cooks and absorb the liquid. Not sure what I did wrong wrong
You can always adjust the cooking time if this happens since it might depend on the type of rice you're using :)
