    How To Make Iraqi Kofta Kebab
    1kg mince (50% beef/50% lamb)
    1 diced brown onion, juice removed
    2 diced roma tomatoes, juice removed
    1 tsp salt
    cracked pepper
    1 tsp cumin powder
    1/2 tsp ground tumeric
    1 handful chopped parsley
    If meat isnt sticky, crack in 1 egg to help bind it together

    Delicious, I am Iraqi we call this iraqi shish kebab and we drizzle sumac when we eat it but with one difference we dont add tomato if we grill it but if we going to fry it in vegetable oil , we add tomato and 1-2 tbls flour to make it sticky, and we shape it by hand as thin discs , I hope you like my comment, Thank you

    Made this, followed the recipe and used a grill pan on the stove. My kebabs were falling apart and I didn't have an egg. So I threw it back in the fridge and then ground the whole mixture. Our mince is very grainy so after grinding, they came together. I would recommend adding fair bit of salt more than recommended. Overall was great, and so easy. No need of going to the shish tawook takeaway. Thank you.

    Hi Henry, all of your kebabs look amazing but could you please help me in finding a recipe for Lebanese bread because I much prefer the wafer thin style as opposed to pitta etc, thank you.

      Steve Caddick from my understanding it's very simple, I think it's just the actual cooking process that's different. I'll try to look into it :)

      Steve Caddick the wafer thin style bread is very similar to a Mexican wheat flour tortilla. the trick is don't use yeast and roll in the same way Henry does for Lamajun with the dowel quite thin. I use a cast iron flat grill hot as I can get it to cook.. sounds simple but takes practice to get right.. hope that helps.

      +Jason Vollmer the main ones I use and keep near me are: salt, pepper, paprika, turmeric, curry powder, cumin, sumak, garlic powder and onion powder

    Another awesome video. A question based on the comments below: serving? I do have sumac although my family thinks it's weird. How do you serve your dishes and with what? (condiments; peppers, pickles etc.)

      cprpottsville basically I generally serve them with basmati rice along with grilled tomatoes and capsicums, sumac gets sprinkled on top of the meat and rice, just simple :)

    I love this dish. So traditionally is it served on a flat bread or rice or both? I know around the Middle East some of the dishes are similar but served in different variations and spices. It's all good but because the world has become so international, I don't get a feel on what are the classic dishes and what are the traditional form served in different cultures. Looks great! I'm hungry!!

    I am iraqi and we eat it exactly like this but with Tannour bread which we buy in from a local restaurant, i highly
    recommend that bread with kebab. We serve that bread in a basket and then BBQ tomatoes and onions, then we make our own wraps at the table.

      +Muzzy I wish I could've made tannour bread 😂 unfortunately I don't have the equipment. We have something similar in Iran too we call it sangak, goes perfectly with kebab ❤

    I have tried everything, and can never get the meat to stay on the skewers. I have finally given up and just make paddies and put on the grill. Your recipes are delicious, thanks for making them.

      Crack an egg in it... It'll help make it more sticky

      You probably have not mixed your mince well enough. Just continue kneading it, or even mix with your hand in one direction, so that the fat and the protein emulsify a bit. This will make the mixture very sticky.

      thats because the veg should have been chopped finer than show in this video... and using a muslin cloth to throughly drain... as what this guy has done is only half the job because you shouldn't see any onion 'lumps'

    Hi Henry, Its remarkable that these kofteh kabab are so similar (with only minor variations) all the way from Pakistan to the Caucusus (Armenia, Azerbaijan etc), with Iran, Iraq & Turkey in between (ie Seekh-, Koobideh-, Adana-, Kofta-kababs) !
    I also noticed how broad your skewers are. Did you have them custom made ? How wide are they (the ones I have are 2cms x 2mm width x thickness) ?

      +dawnlightening yes completely, with the variations of spices etc. I got them from Iran, they are specifically designed for Persian koobideh, as you mentioned mine are the same app 2cm wide with about a 2-3mm thickness

      dawnlightening,, you can buy them online at amazon. Thats where I got mine after I watched Henrys How Tos make his Adana Kebobs. I even built my own "Kebab Burner" (bbq) for cooking them. Very Tasty. I would post a pick of it, but I don't think they will let me. Good Eats to ya'll..

      Thank you both, Henry & J Mead! I'm fully with you J Mead; I love kababs (and grilled lamb chops & steaks). Just the smell of Barbequed meat is enough to drive most people mad with hunger. Speaking of which Henry, please consider doing a video on lamb chops grilled in the Iranian style. All the best!

      Super Hacker try it this way grill it and have a temperature gauge and don't overcook it also add hummus and tahina add your favorite veggies on the grill and cook until preferred doneness.

      Henrys HowTos it is great to hear this without some silly poeple putting offensive comments on!, i am only an ameteur, but love to try all of the many many variety of kebab recipies, and am finding that tender pork can be something incredible!, i am very intetested to investigate which is the best kebab??, is it from turkey? Greece?, iraq?,iran?,kosovo?,macedonia?,serbia?,afghanistan?,bosnia?, ....every country has their own recipie, so i must investigate every single one!!!, and i think you all should too!,

    Looks great thanks for the share and thanks for the tips never thought about it could fall off while cooking that would of been a disaster because I love cooking, Im lucky because live in the Turkish, Cypriot and Greek community of restaurants are in London and I love this stuff. ill give it a go at next BBQ summertime Thanks again.

    Just grilled that on the BBQ and it went down very well. My first attempt at Adana kofte last month fell off the skewers into the charcoal. I realised my mistake and chilled the meat before grilling. Only had enough skewers for 2, so made the rest into patties and put them on the barbie too. Grilled tavuk sis at the same time

    You stolen your recipe from somewhere else and you change just its name. this kebak name original is kobideh kebak and original Recipes for iran . and kofta is another thing with different recipes,

      Henrys HowTos a Persian restaurant In Australia don't mean shit! In England every restaurant Indian, Chinese, Persian etc has changed its dishes to suit the English pallet. Plus they just create bullshit names.
      What you've cooked is clearly not a kofte but if you wish to call it that it's ok because food is a personal interpretation of who we are and where we are.

      Yep, I'm Iranian and this is a 100% Kabab koobideh, pretty much every Iranian would know this dish it's like our national anthem tbh you say koobideh and everyone would know what you're on about!
