Laurel, Mississippi - USA. This looks delicious. I used to use two flour tortillas and butter and put chopped ham and cheese in between the two flour tortillas and cook them in a buttered skillet and make my son small ham sandwich’s. I also made him grilled cheese tortillas sandwiches. Grilled cheese and chicken sandwiches. He and I liked the crunchiness of the flour tortilla and the butter taste of it also. I also made apple and brown sugar tortillas. Used peaches and cinnamon with regular white sugar and flour tortillas and cooked with butter also. Real butter all my recipes are cooked with real butter. Also used flour tortillas to make mini pizzas, small amounts of pizza sauce, a variety of cheese, cooked varieties of meats (ground beef, sausage, chicken, bacon, pepperoni, vegetables: finely diced onions, bell peppers, etc…), Sometimes I would use two flour tortillas and add cheese between each layer to add strength to the flour tortillas if it was going to have a large amounts of toppings. It was sooo good.
I would just put everything in a bowl and mix together,,,, except feta and tomatoes, pour on tortilla add the rest,,,looks great,,,going to try it asap,,,also ,,,I am going to add a small can ofjalepenos,,,,,Wyoming, USA

I add cheese to the egg then I coat my frittata or tortilla, in the cheesy egg then put onto hot grill and pour left over egg mixture over frittata. Hot grill makes for a crispy, tasty, golden, crisp outer coating and I dip each mouthful in brown sauce. I mix chula hot sauce in with egg too, it I feel like it

I tried this with a cast iron pan. Pan was too hot and I burned my dinner. Had a gut ache half the night I swear! Learned my lesson! Go easy on the heat. Eggs cook without pan being on medium high temperature. Good lesson for me! Can’t wait to try it again.
