Lemony Blueberry Loaf Cake (with a Crumb Topping!)

    Ingredients
    For the Crumb Topping:
    4 oz (113g) soft or melted butter
    2/3 cup (150g) granulated sugar
    1/2 cup all-purpose flour
    zest of a small lemon
    a pinch of salt
    The Dry Ingredients:
    1 and 2/3 cup (238g) all-purpose flour
    1 teaspoon (5g) baking powder
    1/4 teaspoon salt
    zest of 2 lemons
    The Wet Ingredients:
    6 oz (170g) unsalted butter, softened
    3/4 cup granulated sugar
    2 eggs
    1/4 cup milk
    2 cups blueberries
    The Icing:
    3/4 cup (105g) confectioner's sugar
    2 tablespoons lemon juice
    1/2 teaspoon pure vanilla extract
    1/2 teaspoon lemon zest
    Instructions
    Preheat the oven to 350 °F, 180 °C.
    Line a loaf pan(9 by 5-inch) with parchment and grease it too.
    Make the Crumb Topping: In a bowl, combine all of the topping ingredients and mash them together using a fork until they are combined. Refrigerate the bowl or set it in the freezer while the cake is prepared.
    Make the Batter: Combine all of the dry ingredients in a bowl and whisk them together.
    Beat the butter, sugar, and vanilla over medium speed until combined. Add the eggs and beat on high speed until fluffy. Add the milk and beat on low until combined and then add the dry ingredients and beat until incorporated.
    Add the blueberries and beat until combined.
    Transfer the batter to the prepared pan and then spread the crumb topping on top.
    Bake for 45-65 minutes or until a toothpick inserted into the center of the cake comes out clean or with some moist crumbs attached.
    Cool completely.
    Make the Icing by combining all of the icing ingredients in a small bowl and whisking them together until smooth.
    Drizzle the icing over the cooled cake and serve with coffee or ice cream.

    Notes
    If using frozen blueberries the cake will take 60-65 minutes to bake. You do not have to thaw the berries before adding them to the cake.
    Any berries can be substituted for the blueberries but blueberries are my favorite in this cake.

      Doesn't REALLY matter. I think she's giving out the measurements for MOST OF HER subscribers. I have a scale & can go either way.BUT a LOT of Americans don't...❤

    Hi Dimitra, your recipe this time is very confusing and all over the place & hard to follow. Tasty as it is, why don’t you start with your cake mixture followed by your topping etc. I just found myself looking everywhere on the written recipe. Why UA-camrs do not write a recipe the way they are dealing with the ingredients? Beat the butter & sugar, add the eggs etc etc. sorry Dimitra, I really struggled to follow it although the cake is simple and warrens better instructions 🇬🇧🧁🇬🇧 Maria

      Just a lot of steps. Recipe & video is NOT hard to follow. Just realize there's 3 steps.

      I did also. The pop up instructions on the screen was different than what she spoke to use and what’s listed on the print out. She also used an extra pinch of salt that she did not list or speak about but you see her using it in the video. I’m glad I was not the only person all over the place ! 😢
