  • Bajan Bittle - A Culinary Excursion
    INGREDIENTS
    8 oz Salt fish
    4 TbSp Fresh herbs
    2 oz Onion
    1 lb Flour
    3 tsp Baking Powder
    10 oz water
    Hot pepper to taste
    Salt to taste
    METHOD
    1. Boil salt fish twice to remove excess salt
    2. Crumble cooked saltfish in a bowl
    3. Add fresh herbs, finely diced onion, pepper and water: mix
    4. Add flour and baking powder: mix well: should be a free dropping consistency
    5. Adjust seasoning to taste

    Great cooking guys. Glad fishcakes got plenty salt fish, season well and not greasy. Some people hardly put saltfish in and fish cakes and does be real greasy such a turn off but yours is on point. Okra slush looks real tasty. Will try the slush sometime. TFS. Big up and blessings from UK🇬🇧🇬🇧

    I have requested can you make rice tea please I never did learn and my grandma past away she use to make it every Friday night with fried fish and bakes

    Thanks for the nice prep on Bajan Fishcakes. Question about the baking soda to flour ratio ...chefs say 2 Teaspoon (baking powder) to 1 cup of flour. What do you say?
